Marani, in fact, is the result of a strict selection of grapes from hillside vineyards in the Soave area, north of the municipality of Colognola ai Colli. Bianco Veronese IGT, the grapes that have reached perfect ripeness are harvested and selected by hand, then placed in drying lofts where they wither for at least 40 days, favouring an important reduction in the percentage of water and the consequent concentration of the sugars contained in the grapes. Traditional processing with a short cold maceration of the marc, part of the must is fermented in oak barrels. At the end of vinification, all the wine is matured 'sur lie'. If Valpolicella, in fact, is known throughout the world above all for the quality of its Amarone wines, it is the Ripasso wines that are striking for their versatility and quality. Valpolicella Superiore Ripasso DOC, Regolo is produced from grapes harvested in the company's vineyards located in the hilly Valpolicella area, north of Verona. 55% Corvina Veronese, 25% Corvinone, 15% Rondinella and the remaining 5% Croatina, this red wine begins its journey with a traditional vinification in temperature-controlled stainless steel tanks. The fundamental step, however, is the 'ripasso' of the wine on the Amarone marc, in the month of February. During this second, very slow fermentation, the wine is enriched with tannins, which ensure its longevity, and is ennobled by the extraction of the typical aromas of Amarone. For ageing, the wine is then left in medium and large casks for a period of 18/24 months. Bright garnet red in colour, the nose reveals an intense and persistent bouquet. La Musina is one of the wines produced by Sartori outside the historic Valpolicella area. In this case it is a Lugana DOC, produced with grapes from beautiful vineyards on the southwest shore of Lake Garda. 100% Trebbiano di Lugana, this interesting white wine comes from processing only the best grapes harvested. Soft pressing and subsequent fermentation of the must take place at a controlled temperature. The area of origin is Soave. Or rather, that of the Classical Soave area, which is the most historic and vocational. It is called Sella and is one of the most interesting white wines produced in the area by the Sartori winery in Verona. Almost pure Garganega, the blend of this wine is completed with 10% Trebbiano di Soave. The grapes are softly pressed, with a short maceration period. It is called "Brolo di Sotto" and is a very pleasant Valpolicella Classico DOC. The "basic" wine of the area, a perfect companion for lunches, dinners or snacks. The starting blend is the classic one of the region, with Corvina Veronese and Corvinone in clear majority, with Rondinella and Croatina ready to give them a hand. All the grapes come from the company's vineyards located within the Classic, or historical, zone of the appellation. We are on the hills north of Verona, where the climate is characterised by a beneficial temperature range between day and night that favours the perfect ripening of the grapes. Vinification is simple but accurate, the grapes are first softly crushed and destemmed, then they are sent to the fermentation phase which lasts 8-10 days. This is followed by a quick refinement of about 6 months in cement and steel tanks. The result is a beautiful red wine characterised by a ruby red colour, tending towards garnet with ageing. The nose reveals a fine, vinous and delicate aroma. In the mouth, however, it is striking for its immediacy. Savoury and harmonious, it reveals a discreet finish that makes it particularly drinkable. This is the wine to be served with classic meat dishes, from roasts to grilled meats. It is impossible to be disappointed by the choice.

Recioto della Valpolicella Classico DOCG, Rerum is a fantastic end-of-meal wine. Sartori produces it from grapes harvested at full maturity in selected vineyards located in the hills north of Verona. 50% Corvina Veronese, 30% Corvinone, 15% Rondinella and Cabernet for the remaining part, the production of this sweet red wine starts with a drying of the grapes for about 4 or 5 months, in dry and well ventilated rooms. When the grapes reach the ideal degree of drying, they are pressed and fermented in steel tanks. The very slow fermentation continues until late spring, leaving a pleasant residual sugar that characterises this wine. The wine is aged in large oak barrels, where it is left to rest for about 6 months. Then, after bottling, the wine rests for a further 2 months in the bottle. Garnet red with purple highlights, this Rerum has aromas reminiscent of ripe fruit and violets. In the mouth it is velvety and pleasantly sweet. A natural companion for all desserts, it is best appreciated when served with a slice of almond cake or with simple biscuits.

Corte Brì is certainly one of the most representative wines of the Sartori winery in Verona. Amarone della Valpolicella DOCG, on the label it bears the mentions Classico and Riserva. This indicates that the grapes used for its production come from the historic area of the appellation and that, in addition to the classic period of maturation in wood, the wine waits in the cellar for at least an extra year. The vineyards, located on the hillside, are situated within the "Corte Brì" estate, cultivated mainly with the classic Veronese Pergola. In accordance with the regulations, this red wine is produced from a blend of autochthonous grapes: 60% Corvina Veronese, 20% Corvinone, 15% Rondinella, 5% Oseleta. For lovers of sweet and elegant wines, this Vernus is an irresistible temptation. Recioto di Soave DOCG, born from a blend of the two typical grapes of the area: 90% Garganega and 10% Trebbiano di Soave. The vineyards are located in the hilly area north-east of Verona, composed of calcareous and alluvial soils. Here the grapes reach full ripeness and are harvested by hand and then sent to special drying lofts where they remain until January or February. Soft pressing and a light maceration of the skins are the preliminary operations that allow the must to begin its slow fermentation at a controlled temperature. Initially this takes place in steel tanks, and is then completed in small oak barrels. Finally, refinement continues in wood for about another 12 months, in contact with its own yeasts and with periodic "batonage" operations. In the glass, the wine has a beautiful golden yellow colour. The nose reveals a complex bouquet of honey, vanilla and dried fruit. In the mouth it is pleasantly smooth and appropriately sweet, with a bitterish aftertaste that brings to mind almonds. It is the perfect companion at the end of every meal. Excellent with simple traditional desserts, it should be tried with a slice of apple pie.
