A great red from the territory. An important bottle that is good today but also has significant ageing potential. A little Piedmontese wine gem. Nascetta, or 'nas-cëtta', is an indigenous grape variety from the Novello area, the very commune where the Sansilvestro winery is based. A long-forgotten vine, due to difficulties in the countryside and low production, it was rediscovered in the 1990s, thanks to the efforts of a group of Novello winegrowers who had the opportunity to taste old bottles. Then, in 2010, the new designation "Langhe DOC Nas-cëtta del Comune di Novello" was recognised. This white wine is made from grapes grown on the company's own plots of land on the banks of Lake Ghercina, and is aged for over 5 months on its lees, acquiring body and structure. In the glass it is an intense yellow colour. The nose is an explosion of vegetable and floral scents. Acacia flowers and even the freshness of citrus fruits stand out. In the mouth, then, the exotic aromas of fruit are combined with a good minerality that accentuates the freshness. Excellent as an aperitif, it lends itself well to accompanying fresh vegetable-based hors d'oeuvres. But also knife-edged raw meat, raw fish and shellfish. Excellent with sushi.

This is the secret of a red wine that is the result of careful processing of the best grapes. Immediately after the harvest, the bunches of grapes are quickly brought to the cellar, where the delicate transformation phase begins. It starts with the crushing and destemming of the grapes, followed by a fermentation phase in steel, in temperature-controlled tanks. The delicate maceration phase lasts for 4 days, with daily pumping of the must over the cap of skins. In the glass it has a beautiful, intense and delicate ruby red colour. On the nose, it surprises with the pleasantness of its aromas reminiscent of thyme and wild flowers. In the mouth, however, what is most striking is the wine's distinctive tannic component, well integrated with all the other components but still perceptible. Medium-bodied, it is a pleasantly dry red, destined for a wide range of pairings. Perfect, for example, with baked pasta, roasts, grilled meats but also with mature and piquant cheeses.

It is normal, therefore, that in this case the expectations are particularly high. A symbol and spokesman for the Langhe, Barolo needs time to open up and express itself fully. And the Patres is a perfect example. Already good today, after a long period of maturation in the cellar, it is a red wine with character capable of evolving for a long time yet. All you have to do is store it well and not be in a hurry to uncork it at the first opportunity. 100% Nebbiolo, as is normal, the grapes used for its production come from the 11 communes of the denomination. After vinification, for the delicate phase of refinement, Patres remains for a minimum of 38 months in the cellar, of which at least 18 months in large Slavonian oak casks. Garnet red and elegant, the nose has hints of spices and dried flowers. In the mouth, however, it is velvety, full and enveloping, characterised by the presence of sweet tannins. A super intense wine, it requires a weighty combination. Excellent, for example, with game or a tasty braised veal. It goes well with stewed meats in general but also with mature cheeses.
