We are in the Collio Goriziano, in Friuli Venezia Giulia. This is where Cantina Muzic produces its Ribolla Gialla. Collio DOC, this white wine embodies the freshness, elegance and minerality typical of this indigenous variety. The grapes come from vineyards located in the municipality of San Floriano del Collio, particularly in the localities of Bivio, Valerisce and Asci. This area is characterised by a cool, breezy climate, with large temperature swings between day and night, which favours optimal ripening of the grapes. Harvested by hand within the third decade of September, the bunches are carefully selected to preserve their integrity and freshness. Once in the cellar, the grapes are destemmed and undergo pellicular maceration for 12 hours at a controlled temperature. This process allows the most delicate aromas and flavours to be extracted from the skins. This is followed by soft pressing and cleaning of the must by static decantation. Alcoholic fermentation takes place in steel at a controlled temperature for 8-10 days, preserving the wine's freshness and vivacity. Refinement on the noble lees, "sur lie", in steel tanks for at least four months completes the vinification process. Pale straw yellow in colour, it offers an intense and fragrant bouquet on the nose, where floral scents, such as acacia and jasmine, combine with delicate notes of white-fleshed fruit, such as peach and pear. The olfactory symphony is completed by hints of citrus fruits, such as lime and cedar, and mineral nuances that give the wine a fresh and refined character. In the mouth, this Ribolla captivates with its freshness and minerality. The lively acidity, typical of the variety, perfectly balances the residual sweetness, giving a pleasant and harmonious sip. Ideal as an aperitif, it accompanies fish or vegetable starters. Also perfect with fresh cheeses or grilled vegetables.
