Valpolicella DOC, Marchesini di Monte Cillario, represents 'the basis of tradition'. A very typical Valpolicella, where it is easy to find all the fresh aromas of the territory. After all, safeguarding tradition is at the heart of the work of this fine Veronese company. Starting with the vineyard, where the traditional Veronese Pergola still coexists with the more modern Guyot. At Marchesini, all the basic grape varieties of the region coexist, with 55% Corvina, 30% Rondinella and 15% Molinara. The harvest, which is manual, allows for a good selection of the bunches. Thus only perfectly healthy ones are sent to vinification. At the end of vinification, the wine is aged in steel tanks for a period of 7/10 months. It is then bottled and left to rest again in the cellar for another 3 months, before being finally put on the market. To the eye it has a beautiful ruby red colour, typical for a fine young wine. The nose is pleasantly vinous and subtly almondy, with ripe cherry and rose tones. In the mouth, it is fresh and soft. Pleasantly tannic and lively. A fine wine to uncork, without remorse, right from the antipasto. An excellent companion for lunches and dinners, it goes well with first courses and fresh cheeses.

A 'Superiore' is defined as a wine, in this case a Valpolicella, that has an alcohol content higher than the minimum prescribed by the specifications and, above all, has above-average organoleptic characteristics. It is therefore a 'Super' Valpolicella. Euphoria, proposed here by Monte Cillario, is precisely a Valpolicella Superiore DOC. The name, as the producers emphasise on their website, encapsulates the joy of tasting it with friends on any occasion. And it is undoubtedly to be believed. In the countryside, the vineyards are conducted partly with the traditional Veronese Pergola and partly with the more modern Guyot. The blend is typical of the region, with Corvina, Corvinone, Rondinella and Croatina. Manual harvesting and careful vinification allow Euphoria to present itself in the glass with a beautiful intense red colour with violet reflections. The nose is pleasantly fruity, with hints of cherry and a nice toasty note. In the mouth it is full, balanced and enveloping. With soft tannins and a typical morello cherry aftertaste. It is the right wine to serve when the menu includes meat and game dishes. Also perfect with hard cheeses.

It is the eternal struggle between lovers of Amarone della Valpolicella and those who instead think that, for 'everyday' use, the richness of Amarone is excessive, preferring it to the more approachable Ripasso. When the "baby Amarone" in question has the makings of this I Berari, Valpolicella Ripasso Superiore DOC signed by Monte Cillario, the comparison is even more arduous. Because in this case we are dealing with a wine 'with a structured body, but which maintains its finesse in a velvety soul', as its producers effectively describe it. 50% Corvina, 30% Corvinone, 15% Rondinella and 5% other varieties, this Ripasso comes from vines cultivated with care and respect, partly trained with the traditional Veronese Pergola system, partly with more modern systems such as Guyot. Once the Amarone fermentation is complete, the best cuts of the wine suitable for becoming Valpolicella are re-fermented, according to the traditional 'ripasso' technique, on its marc. This allows a slow refermentation lasting 7 - 8 days, which gives the finished wine more richness in terms of colour, extracts and aromas. After an initial refinement in steel, the wine is then matured in tonneaux and barriques for about 18 months, followed by a further 4 months resting in the bottle, before being definitively put on the market. Intense ruby red, it offers a distinct aroma of red fruit, with hints of vanilla and cocoa. In the mouth, it is warm, velvety and full-bodied. Good persistence, due to the optimal combination of extracts and phenolic substances. A perfect wine to accompany all meat dishes as well as medium-aged cheeses.
