A younger brother of the lord of Valpolicella, the noble Amarone, this wine, in Speri's version, comes from the company's own vineyards, located in Valpolicella Classica. We are located between 120 and 350 metres above sea level, specifically in the municipalities of San Pietro in Cariano, Fumane and Negrar. In this case, the basic blend is composed of Corvina Veronese for 70%, Rondinella for 20% and Molinara, with other indigenous varieties, for the remaining 10%. After manual harvesting, the grapes are taken to the cellar for immediate crushing, followed by maceration at a controlled temperature. Then, at the beginning of March, this Valpolicella Classico wine is repassed over the Amarone marc. This is followed by 12 months of maturation in 20-hectoliter Slavonian oak casks and a further 6 months of bottle ageing. Intense red, on the nose this Ripasso presents very clear scents of red fruit, spices and cocoa. In the mouth it is warm and soft, well balanced by round tannins. An extremely versatile wine, it is ideal with meat and cheese dishes.

Harvesting, as is customary for the winery, is done by hand. The grapes are harvested in small 13 kg crates to preserve their integrity and once in the cellar are immediately sent for processing. Only the flower must, obtained from the first pressing, is used for this cuvée. Part of the wine, approximately 23%, is aged in oak barrels, adding complexity and depth. After the creation of the cuvée, the wine then rests on the lees for 30 months, acquiring a fine and persistent perlage. In the glass, it has an antique pink colour, brilliant and luminous. Perfect as an aperitif, it also does not disdain a place on the table. For a territorial pairing, we can pair it with classic casoncelli, the tasty traditional stuffed ravioli, or with a lake fish dish, such as risotto with perch or a char fillet. But wine is versatile and can adapt to a thousand situations. The only limit might be our imagination.

During this second, very slow fermentation, the wine is enriched with tannins, which ensure its longevity, and is ennobled by the extraction of the typical aromas of Amarone. For ageing, the wine is then left in medium and large casks for a period of 18/24 months. Bright garnet red in colour, the nose reveals an intense and persistent bouquet. In the mouth it is dry and velvety, with hints of cherry. The body is robust and harmonious. A red with great personality, this Ripasso goes well with winter dishes. Excellent with game and tasty cheeses.

Then the must, separated from the skins, ferments in small barrels and steel vats at a controlled temperature. The Chardonnay grapes, on the other hand, are vinified in the traditional way, with pressing of the whole bunches and only the best fractions of must are then fermented in vats. After 7 months of ageing, the cuvée is created by blending the Pinot Noir and Chardonnay wines. This is bottled and matured on the lees, at a constant temperature of 12°C, for an average period of 30 months. Dégorgement takes place in the absence of oxygen, using a unique system, invented and patented by Ca' del Bosco. This avoids oxidative shocks, further additions of sulphites and makes its Franciacorta wines purer, and more long-lived. Cuvée Prestige Rosé Edition 46 is distinguished by its salmon-pink colour, delicate yet brilliant, with golden reflections and a fine, elegant effervescence. The nose reveals a rich and seductive bouquet, with aromas of red fruits such as strawberries, raspberry and cherry, accompanied by floral notes of rose and peony. This is followed by nuances of citrus fruits and a light roastiness that provides intriguing complexity. In the mouth, it is fresh and lively. The acidity is well balanced and contributes to a pleasant and refreshing drink. Ripe red fruit flavours intertwine with notes of bread crust and a hint of spice, ensuring a long and pleasantly persistent finish that leaves an elegant and harmonious memory.

It is not every day that one has the opportunity to taste a wine that in fact represents the history of a denomination. And not just any appellation. But of one of the most beloved in the world, Chianti Classico. This honour is granted to us when we are lucky enough to come across a bottle like this. Villa Antinori Chianti Classico DOCG Riserva, in fact, is one of the historic labels of the Antinori house, created in 1928 by Marquis Niccolò. A wine produced to be aged and improved over time, it has since found a place in the most prestigious cellars of embassies, royal houses, grand hotels and restaurants. It is made from Sangiovese grapes, for once flanked by other complementary varieties. The grapes are first destemmed and then softly crushed, to initiate alcoholic fermentation and maceration that lasts about 12 days. At the end of malolactic fermentation, the blend is made, which is then left to mature in barrels until spring. Intense ruby red in colour, the nose has notes of small red fruits, currants and raspberries that blend well with notes of cherries and a slight woodiness. In the mouth, it is harmonious and round. Well fresh and tannic, it has a very pleasant finish. It goes well with game dishes, but also (and perhaps above all) with the more classic Florentine steak.

Quattro Vicariati, here proposed in a magnum version, i.e. in a 1.5-litre bottle, is a Rosso Trentino Superiore DOC made from international grapes. It is, as they say in the jargon, an elegant Bordeaux blend, composed of 65% Cabernet Sauvignon grapes and the remaining 30% Merlot, to which is added a small percentage, about 5% Cabernet Franc. A (great) oenological gem signed by Cavit, produced with grapes from the area between Ala, Avio, Brentonico and Mori, in Vallegarina. This area, known as the Quattro Vicariati (Four Vicariates), is the southernmost in the region and is therefore the most suitable for the production of great red wines. Vinified in red, with maceration on the skins for about two weeks, after fermentation the wine is left to mature in barriques and small oak barrels for at least 24 months. Then, after bottling, follows further ageing in the bottle for about another 12 months. A red wine with an intense, bright ruby colour, the nose offers balsamic, plum, blackberry and tobacco sensations. In the mouth, however, it shows great balance, with typical notes of green pepper and ripe red berries. Savoury and soft, it has noble tannins and a long, enveloping finish. A red of fine character, this Quattro Vicariati is ideal with first courses dressed with tasty sauces, but also grilled meat and mature cheeses.
