A bubble of great pleasantness, coming from an area of rare beauty. We are talking about the Pas Dosé, Metodo Classico, proposed here by Lonati Winery. Vintage, this wine is produced from 80% Chardonnay and 20% Pinot Noir. Grapes come from the estate's vineyards in Castel Boglione, in the province of Asti. We are located at approximately 310 metres above sea level, in optimal positions to reach full ripeness. After harvesting, which is done manually, the grapes are taken to the cellar where they are transformed into must. This in turn is transferred into steel tanks, and a small part into barrels, for alcoholic fermentation at a controlled temperature. The resulting wine is then bottled, where the second fermentation takes place for approximately 24 months. At that point, the wine is ready for remuage and dégorgement. In the glass it reveals beautiful golden hues, with chains of bubbles rising rapidly to the surface. The nose reveals intense and dynamic aromas, bread crust with marked notes of dried fruit, honey, almonds and lime blossom. On the palate, however, it is a delicate wine in perfect harmony with the right acid balance, pleasantly mineral, full-bodied and structured. Perfect as an aperitif, it is the right wine to uncork at a lunch or dinner where the menu is all about fish.

We are located in Treiso, province of Cuneo. One of the villages that fall within the Barbaresco appellation. Here, on soils composed of clay and blue marl, with an ideal south-westerly exposure and an average altitude of around 400 metres above sea level, the Lonati Winery cultivates its best Nebbiolo, destined to become Barbaresco DOCG. After the harvest, the grapes are brought to the winery where they undergo a 48-hour cryomaceration process before fermentation in contact with the skins. This operation lasts about 12 days in steel tanks. Alcoholic fermentation takes place, again in steel, with a portion of whole grapes. Afterwards, malolactic fermentation starts naturally in wooden vats, where the wine matures for about 24 months. In the glass it has a beautiful ruby red colour. The nose develops a bouquet of beautiful elegance and complexity. Ethereal, it has an intense bouquet, with notes of ripe red fruit, liquorice wood, and sweet aromatic spices. In the mouth it reveals itself to be a full, soft and velvety wine... like an unexpected embrace. A very pleasant silky tannin is revealed in the finish. Good today, this red can age well for a very long time in the cellar. It should be uncorked at a nice meat dinner. Excellent with stews and stews.

In the hills of Monferrato, the Barbera vine finds its highest expression. It is here, in fact, that Nizza DOCG is produced, the result of selected grapes and strict regulations. It is, in practice, the spearhead of the production of this noble vine in Piedmont. Lonati Winery offers it here in a personal interpretation characterised by great pleasantness. Nizza DOCG Mille tramonti, 100% Barbera, comes from the estate's vineyards in Nizza Monferrato, in the province of Asti. After manual harvesting, the grapes are brought to the winery to immediately begin the fermentation phase in contact with the skins, at a controlled temperature. This phase takes place in stainless steel tanks and lasts for about 20/25 days. At the end of the transformation, the wine continues with the 18-month maturation phase, of which at least 9 months in large casks, before bottling and the final phase of refinement in glass. A ruby red of great intensity, this Barbera reveals itself to be a wine of great structure and elegance, with great ageing potential. The nose reveals an intense perfume with notes of ripe red fruit and tobacco. In the mouth it is full-bodied, with notes of ripe cherries, tobacco and a delicate spicy finish. A perfect wine to pair with main meat dishes, mature cheeses and cured meats.
