There are the classic Proseccos. And even the more refined Valdobbiadene Conegliano Prosecco Superiore. And then there is the Tajad signed by Le Vigne di Alice. A Brut sparkling wine, Charmat method, it is inspired by the classic blend of wines from the Conegliano area, where, in addition to Glera, there are other indigenous grape varieties, such as Verdiso and Boschera. If we are looking for an interesting bubbly and want to impress our friends with a unique bottle, this is almost a must. Its aromas, floral and fruity, are striking in their intensity and complexity, without losing that touch of healthy immediacy that is the very fortune of Prosecco. The processing of the base wines destined for frothing is completed with a period of about two months in contact with their own yeasts, to add complexity and structure. Secondary fermentation takes place in an autoclave for almost two months. Tajad has a beautiful, luminous straw yellow colour, with a fine, continuous perlage. On the nose, in addition to the fresh component, it is easy to detect sensations of bread crust, due to prolonged contact with the yeasts. In the mouth it is fresh and lively, with a nice juicy fruit and a pleasant finish.
