The Faro DOC is a relatively young controlled designation of origin, established in 2014, that protects the production of high-quality red wines from a unique territory such as the slopes of the Etna volcano. The indigenous grape varieties Nerello Mascalese and Nerello Cappuccio are the protagonists of this designation, to which small percentages of other black grape varieties, such as Nocera and Nero d'Avola, can be added. A fine example is this Rosso proposed by Le Casematte. A small volcanic masterpiece. Intense and structured, it is made from Nerello Mascalese (55%), Nerello Cappuccio (25%), Nocera (1%) and Nero d'Avola (1%) grapes grown in the company's vineyards on the slopes of the volcano. A unique terroir, characterised by mineral-rich soils and a cool, breezy climate. Extreme conditions that give the grapes a strong and decisive character, with intense aromas and a distinct minerality. The grapes are harvested manually in boxes and are immediately transported to the winery. Here fermentation begins in truncated conical steel vats with frequent punching-down (5 times a day) for a month. This is followed by pressing of the skins and then the wine is left on the lees until January of the following year. At this point, the blending of the different masses takes place and the final stage of maturation in small to medium-sized French oak begins, which continues for about 9 months. Finally, after bottling, the wine matures for a further 6 months before being put on the market. Intense ruby colour with garnet reflections. The nose reveals a broad and complex bouquet, characterised by intense aromas of ripe red berries, such as blackberry, cherry and plum. Then floral notes of violet and rose, spicy hints of black pepper, nutmeg and liquorice. In the mouth the wine is warm, enveloping and structured, with well-integrated tannins and a pleasant freshness that gives balance and persistence.

Here the soil is rich in minerals, with a composition that favours the growth of grapes with intense flavours and distinctive characteristics. Sicilia DOC Bianco Peloro is a blend of two indigenous grape varieties: Grillo (65%) and Caricante (35%). Grillo, known for its hardiness and aromatic notes of citrus and tropical fruit, combines perfectly with Caricante, a grape that gives freshness and a distinct minerality to the wine. Together, these grapes create a perfect balance of aromas, acidity and structure. After the grapes are harvested by hand, the bunches are protected from the heat with dry ice to keep the temperature low and preserve the aromas during the subsequent fermentation. The wine then remains on the fine lees until January, allowing aromatic complexity and richer structure to develop. This is followed by blending of the different batches and maturation in stainless steel tanks. Finally, the wine matures in the bottle for three months, thus reaching its full expression. In the glass, it has a luminous straw-yellow colour. The bouquet is refined and persistent, with iodized mineral notes that blend with aromas of white and yellow-fleshed fruit, such as peach and apricot. Delicate floral nuances of mimosa and chamomile are accompanied by fresh notes of Mediterranean herbs, such as rosemary and thyme. In the mouth it is fresh and savoury, with a vibrant acidity that enhances the richness of the fruit. The finish is long and tonic, enhanced by a lively citrus note that leaves a pleasant sensation of freshness.

Le Casematte is a beautiful winery located in one of the most evocative areas of Sicily. We are in the province of Messina, where it benefits from a unique terroir. In fact, the vineyards are located on hills that enjoy sea breezes and abundant sunshine, creating ideal conditions for growing high quality grapes. This is where Sicilia DOC Rosso Peloro was born, a blend of two indigenous grape varieties: Nerello Mascalese (70%) and Nocera (30%). The Nerello is known for its elegance and ability to best express the terroir. For its part, Nocera, an ancient local variety, adds structure and depth to the finished wine, with its soft tannins and aromas of dark fruit and liquorice. Fermentation takes place in truncated conical steel vats, with punching-down carried out five times a day for a month, ensuring optimal extraction of colour and tannins. After pressing the skins, the wine is left on the fine lees until January of the following year, developing aromatic complexity and structure. This is followed by blending and maturation in steel with a light passage in wood, using new tonneaux for three months, adding subtle notes of vanilla and spices without overpowering the character of the wine. Bottle ageing for three months completes the process, allowing the wine to reach its full expression. A brilliant ruby colour with violet hues, the nose offers a broad and persistent bouquet, with aromas of small red fruits, such as cherries and wild strawberries, accompanied by floral notes of violet, carob and liquorice. There are also spicy hints of black pepper and cloves. In the mouth, it is fresh and rich in fruit, with a dense and nervous tannic texture that gives structure and longevity. The vibrant acidity balances the richness of the fruit, resulting in a long, harmonious finish.
