Let us immerse ourselves in the heart of Champagne, in Courmas, a small treasure hidden in the Montagne de Reims. This is the birthplace of Jean-Bernard Bourgeois' Champagne Dosage Zéro, a wine that expresses the essence of terroir. Jean-Bernard Bourgeois' vineyards are located on limestone-clay soils, an ideal terroir that gives the wines an extraordinary minerality and complexity. This particular soil composition, combined with the region's cool and humid climate, creates ideal conditions for the cultivation of Chardonnay and Pinot Noir, which contribute equally to the composition of this wine. Champagne matures for an impressive 120 months on the lees. This long bottle-ageing allows it to develop complex aromas and acquire a solid structure. The absence of dosage, i.e. the addition of liqueur d'expédition, enhances the purity of the fruit and minerality. To the eye, it has a brilliant straw yellow colour with a fine and persistent perlage. On the nose, it reveals a complex and enveloping bouquet, with notes of white-fleshed fruit, citrus fruits, brioche and spices. In the mouth, it is characterised by excellent structure, lively freshness and pronounced minerality. The finish is long and persistent, with notes of honey and toast. Dosage Zéro is a wine with great ageing potential. Capable of evolving positively for at least 10 years, it will develop even more complex aromas and tertiary nuances with the passage of time. Perfect with raw fish dishes, seafood, mature cheeses and white meats.

This characteristic, combined with the cool, moderate climate, allows the grapes to reach perfect ripeness, maintaining a lively acidity and developing complex aromas. Cuvée Désirée comes from a particularly successful blend of Pinot Meunier in clear predominance, giving freshness and fruity notes, plus 25% Chardonnay and 10% Pinot Noir. This balance of grape varieties makes the Champagne versatile and suitable for many occasions. Maturation in contact with yeasts continues for around 30 months, a period sufficient to develop a delicate aromatic bouquet and a creamy texture, without overpowering the wine's freshness. An important Champagne, the product of long processing and a very long ageing on the lees. We are talking about Champagne Réserve Cuvée Aristide Extra Brut Millésimé by Jean-Bernard Bourgeois. A refined expression of the terroir of Courmas, a small village in the Montagne de Reims, in the heart of Champagne, the vineyards here are characterised by limestone-clay soils that offer excellent drainage and a unique ability to reflect sunlight towards the vines. All this favours the complete ripening of the grapes and the production of wines of great character. Cuvée Aristide is a blend of equal parts Pinot Noir and Chardonnay, a perfect balance of structure and finesse. After bottling and frothing, this Champagne matures on the lees for an impressive 90 months, i.e. 7½ years. During this long maturation, hints of bread crust, dried fruit and a mineral touch reminiscent of the terroir emerge. On tasting, this Champagne stands out for its marked savouriness, combined with a subtle mineral note and delicate texture. The nose is refined, with aromas of ripe citrus fruits, toasted almonds and a slight hint of flint. In the mouth, the freshness perfectly balances the structure, making this wine an ideal companion for a complete meal. It pairs well with baked fish dishes, shellfish, white meats and mature cheeses. Excellent with creamy risottos or truffle dishes.
