When the producer is Inama, of one thing you can be certain. That inside the bottle you will never find a wine that is neither banal nor predictable. Foscarino, in particular, is the Inama family's interpretation of Soave Classico. A strongly territorial white wine made from pure Garganega grapes from old vineyards over 40 years old. The vineyards are located on Monte Foscarino, where they are rooted in basaltic-lavicolous soil, enjoying a particularly favourable south-easterly exposure. Once in the cellar, the Foscarino grapes are gently pressed and macerated for 3-12 hours. After a 24-hour static decantation, the must undergoes alcoholic fermentation 1/3 in steel, 1/3 in large casks and 1/3 in French oak barriques (third and fourth passage) where periodic batonnage is carried out for 6 months, after which the wine is transferred to steel. In September, the final blend is created and in November, after bottling, the 'Soave Classico Foscarino' remains in refinement for a few months before being presented on the market. Intense yellow in the glass, it opens fresh, mineral and deep, with aromas of wild flowers such as elderflower, iris and chamomile. In the mouth, it is rich, complex and multidimensional with an almond aftertaste. Over time, these notes evolve and transform. It is, in fact, a white wine with a good capacity for ageing. Even 10 or 15 years, if it is well stored in the cellar.

Vulcaia, and with it Vulcaia Fumè, was the first wine produced by the Inama company. It was the year 1991 and the Soave area had not yet achieved the necessary notoriety. But the great potential of this unique territory, characterised by volcanic soils capable of producing incredible wines, was already clear. However, the Inama winery is counting on a great international grape variety to start with. A Sauvignon that, by sinking its roots into such a special soil, gave rise to a completely new version of the French variety. The vine, as we read on the company's website, is tamed by the land, partly modifying the fragrances and aromas of the varietal. It is the terroir with its characteristics that dominates the vine and not vice versa. Vinified in stainless steel, this Sauvignon presents itself in the glass with a beautiful straw yellow colour. On the nose, citrus and sweet flowers. In the mouth it is pleasantly mineral, with notes of exotic fruit and citrus. The finish is long and persistent. Bradisismo is one of the most loved and appreciated labels of the Inama winery in the world. It is, as we read on the winery's website, 'our classic reserve'. Produced since 1997, the particular name recalls the geological event that generated the Berici Hills territory. Made from 70% Cabernet Sauvignon and 30% Carmenere, this wine is produced with grapes from organically farmed vineyards. What makes this red wine unique is certainly the presence of Carmenere, a grape variety dear to the Inama winery's technicians, which strongly characterises the blend and blends so well with Cabernet Sauvignon that it is considered a valid alternative to a Supertuscan or a top Bordeaux. Moreover, the wine enjoys an excellent value for money. It matures for about 15 months in only 50 per cent new barriques, and expresses a synthesis of the intense ripe, concentrated cherry aroma of Cabernet Sauvignon, together with the lively notes of Carmenere, such as pepper, cocoa and berries. Bradisismo is an exciting red wine for the whole meal. Ideal to accompany grilled meat, it has enough stuffing to hold its own with savoury meats such as lamb or kid and medium-aged cheeses. A great red that never disappoints.

Carbonare is - technically - an Additional Geographical Unit. In other words, a well-defined vineyard from which high quality grapes are sourced and used for the production of this Soave Classico. Or rather, as Inama's technicians say, 'their most modern interpretation of Soave Classico'. The vineyard, still cultivated with the classic Veronese Pergola system, is located in the Carbonare area and enjoys an eastern exposure. The soil is typical for the area, namely volcanic and capable of imparting a subtle minerality to the wines produced there. 100% Garganega, the vines are between 45 and 60 years old and are located at an altitude of approximately 250 metres above sea level. Once in the cellar, the grapes are gently pressed and remain in skin maceration for 3 to 12 hours. Alcoholic fermentation follows, in steel, after which batonnage is carried out monthly for a year. It is bottled in November and then left to age for a few months before being presented on the market. A vertical wine with an important acidic shoulder, it has a distinct floral character. This is followed by citrus sensations and a sharp, savoury finish. An intense white with character, this Soave calls for a delicate pairing. Excellent with a rich plateau of raw seafood or, to stay in the territory, with a tasty baccalì mantecato.

Everything in a 0.75 cl bottle has a special meaning for those who produced it. Even the label. As in the case of Inama, which, on its website, for each reference tells us a little something that allows us to better appreciate its work. In the case of this Carminium, for example, the label is evocative of the place of origin. The Oratory of San Lorenzo, a place of peace and quiet, is the area where the Carmenere grapes used in purity come from. In the centre of the vineyard, there is an old mulberry tree. During autumn, the leaves of the Carmenere turn red, while the mulberry tree turns yellow. On the label, however, the tree is red, like the vines, symbolising the profound bond between the elements and the vineyard itself.An immediate wine, without neglecting complexity and finesse, this Carminium, Colli Berici DOC is the result of a particularly careful hand harvest, followed by a pre-fermentation maceration of 24-48 hours, and alcoholic fermentation, in steel for just under a month. This is followed by malolactic fermentation and maturation in French oak barriques, part new (35%) and part second-passage. After one year, the wine is transferred to stainless steel for a further 4 months and finally bottled. Dark red colour with blue-violet reflections. The nose is intense, with aromas of herbs and spices and dark fruit. In the mouth, however, it is mainly appreciated for its ripe, velvety tannins.

Vulcaia Fumè is a pure Sauvignon, Veneto IGT, proposed by Inama. Not the usual wine of the territory, but a very special interpretation of the most beloved of aromatic grape varieties. The idea, in fact, was to make the Soave territory known, not only through its classic wine, but with a completely different interpretation. Once in the cellar, the grapes are cooled in a cold room for a few hours and then destemmed. This is followed by cold pellicular maceration and alcoholic fermentation in heavily toasted French oak barriques, partly new and partly (the majority) second and third passage. Maturation then continues for about 6 months, during which periodic batonnage is carried out. The wine is then transferred to stainless steel to be bottled in November, where it is aged for a few months before being presented on the market. This Vulcaia Fumé has attracted considerable interest from the very first harvests because of its plumpness and powerful component of tropical fruit, coffee and citrus fruits and aromatic floral notes. A unique wine, it certainly requires a high level of pairing. Try it, for example, with smoked salmon, caviar or botargo. For lovers of local cuisine, this Vulcaia Fumé also goes well with a tasty onion soup or the classic baccalì alla vicentina.
