If Hauner is Hauner, that is to say, if for over 50 years his name has been one of the most respected in Sicily, it is because of his ability to work the most typical Aeolian grape variety, Malvasia delle Lipari, with absolute mastery. Here proposed in the DOC 'natural' version, thus with an alcohol content of 12.5 degrees. In the Hauner winery's interpretation, Malvasia delle Lipari is supported by a small percentage, around 5%, of Corinto Nero, a black grape variety native to Sicily but, as its name suggests, originating in Greece. Harvesting, rigorously manual in order to select only the best and faultless bunches, is late. When the grapes have lost some of their water content and the sugar has concentrated along with the most typical aromas of the variety. In the cellar, vinification begins with skin contact, to add complexity to the must, which is then sent to the temperature-controlled fermentation phase. This is followed by a maturation phase, or ageing, in temperature-controlled tanks, lasting about 8 months, followed by a further 6 after bottling. Only at the end of this long wait is the wine ready to be uncorked and appreciated in all its facets. Beautiful golden colour, crystal clear and luminous, in the glass it reveals an excellent consistency. The nose reveals itself to be rich, broad and aromatic, with notes ranging from ripe fresh fruit, such as apricot, figs and medlars, to hints of lavender and thyme, with a light almond finish that gives it great finesse. In the mouth it is sweet and immediate, with savouriness and freshness. Warm and enveloping, it enjoys a long persistence. Excellent with spoon desserts, it also accompanies blue and spicy cheeses with pleasure.
