Soft pressing and careful fermentation at a temperature of about 20 degrees, the wine is processed exclusively in steel in order not to distort the aromatic picture of the grape. In the glass it has a beautiful straw yellow colour. The nose is intense and elegant, with a lovely bouquet that ranges from fruity notes of apple and pear to peach and citrus. In Alto Adige it is called Blauburgunder. For us Italians it is more simply pure Pinot Noir. The stated aim was to create a new and innovative wine. A young, modern and casual white wine. This is how Hans Rottensteiner arrived at the creation of Kitz, Vigneti delle Dolomiti IGT Bianco, a blend of grapes well-suited to their terroir and capable of creating a pleasantly aromatic and drinkable wine. 30% Sauvignon and Pinot Grigio, 20% Chardonnay and Pinot Bianco, this Kitz is not only modern in its glass but also in its appearance. The name, a small curiosity, comes from the German word used to indicate the ibex cub, the animal featured in the winery's herald. Vinified only in steel, with strict temperature control, to best preserve the freshness of the initial fruit. After vinification, it is matured, again in steel, for a few months before bottling. Fresh, fruity and smooth, Kitz is the wine to open during a cheerful aperitif with friends, but it is also perfect to accompany simple fish dishes. Excellent, for example, with a rich grill or spaghetti allo scoglio.

This interesting pure Lagrein, Alto Adige Gries Riserva DOC, belongs to the Select line. Lagrein, after all, as an indigenous variety of the Alpine arc, is certainly one of the jewels in the crown of South Tyrolean viticulture. Lagrein loves the cool air, but does not disdain the mild climate of the Bolzano basin, where it can take root in deep, loose soil. Here the conditions are perfect for bringing the grapes to full maturity. Then it is only up to the good local vintners, such as Hans Rottensteiner, to transform them into a full, dark wine. In this case, the grapes used come from three vineyards in the centre of the hamlet of Gries, with vines over 30 years old. After fermentation in cement, the wine matures in barriques for 12 months, followed by a further 12 months in oak barrels. This intriguing Lagrein presents itself in the glass with a beautiful deep colour, with fantastic notes of violet, cherry, chocolate, liquorice, berries and, with time, also tobacco. In the mouth it reveals a fruity and velvety character, with sweet tannins made soft by a wise use of barriques. Excellent with game, in general this red wine should be served with meat dishes with a pleasantly spicy flavour. Excellent, for example, with the classic beef goulash.
