Maipo Valley is considered Chile's most historic wine region, with vine plantings dating back as far as the time of the Spanish conquistadors in the 16th century. This is the land of choice for Chile's best Cabernets. A fine example of this is this Red Blend Gran Reserva, about half of which is Cabernet Sauvignon, plus 30% Carménère, 13% Syrah and 7% Petit Verdot. A particularly complex blend for a wine that promises great satisfaction. The grapes are processed separately, at a controlled temperature with several pumpovers and racking per day. Each batch is macerated and fermented separately in a long process lasting between 15 and 20 days. At the end of vinification, approximately 70% of the wine is aged in wood. 10 months, half in American oak and half in French oak. The remaining 30%, on the other hand, is stored in steel tanks while awaiting the final bottling. The result is a wine characterised by an intense ruby red colour, with equally intense aromas of black and red fruit, blackberry jam and spicy notes. There is also a perfect correspondence in the mouth, where one discovers a red wine with a beautiful structure, perfectly balanced, and soft tannins. The finish recalls notes of spices, chocolate and vanilla. An important and gratifying red, it allows a wide range of pairings, especially with beef, pork and game. But also charcuterie and grilled sausages.

We are in the heart of Chile. Here, in the Casablanca area, the Zonin winery, owner of Dos Almas, harvests the Chardonnay that is used to produce this interesting reserve. Super healthy and perfectly ripe bunches are brought to the cellar to be processed. After pressing, the must is sent for fermentation in temperature-controlled steel tanks, with full respect for the most delicate primary aromas. After fermentation, the wine is then aged on its lees for about 6 months, using the btonnage technique. At the end, approximately 25% of the wine is matured in French oak, while the rest remains in steel tanks. The result is a white wine characterised by a brilliant straw yellow colour. The nose is elegant and expressive, with distinct aromas of tropical fruit, such as pineapple, and delicate notes of vanilla and dried fruit, conferred by the partial ageing in oak. In the mouth it reveals good body and pleasant acidity. The finish is soft, dominated by tropical fruit, with a light touch of vanilla. Ideal with fish and fresh cheeses, this white wine 'made in Chile' is also perfect with risottos, pasta dishes and white meats.

The name Zonin is synonymous with bubbles in Italy, and it was impossible for the Venetian family not to try to bring their know-how to the other side of the world, to Chile, where they own the Dos Almas winery. With grapes from the Casablanca Valley vineyards, Chardonnay for the most part, with a small addition of Moscatel grapes, comes this Sparkling Brut. After the harvest, which is slightly early to favour the natural freshness of the grapes, the must is protected from contact with oxygen throughout the fermentation process. During this delicate phase, careful controls and controlled temperatures allow the cellar technicians to extract all the best from the starting raw material, and in particular the typical aromatic and varietal characteristics. The base wine is then made sparkling using the traditional Martinotti/Charmat method. In the glass one discovers a bubble characterised by a beautiful pale straw yellow colour with greenish reflections, enhanced by a fine and persistent perlage. The nose has citrus notes of grapefruit and lime, accompanied by soft floral aromas. On the palate it is fresh and sparkling, with small persistent bubbles that tickle the palate and ensure a pleasant lingering finish. Served chilled, it is perfect as an aperitif. At the table, it accompanies fish, seafood, fresh salads and unripened cheeses.
