The winery is named after Frédéric Prain's inspirational muse, his wife. He, an eclectic Parisian engineer, has created a beautiful winery in the heart of AOC Chablis. We are in the northern part of Burgundy, in Milly, where the cool climate and limestone-marl soil create an ideal habitat for growing Chardonnay. The grapes, harvested by hand when fully ripe, are vinified in an artisanal manner, with pneumatic pressing and fermentation in temperature-controlled, lined cement vats. This is followed by malolactic fermentation and ageing on the fine lees for 10 months, which gives the wine aromatic complexity. In the glass it has a beautiful bright straw yellow colour. The nose offers a bouquet of floral and fruity aromas, with notes of white flowers, citrus fruits and flint. In the mouth, it is fresh and mineral, with pleasant acidity and a lingering finish. A versatile wine, it pairs perfectly with a variety of dishes. Ideal with fish dishes, shellfish, fresh cheeses and light first courses.

Today we find ourselves in one of the most characteristic corners of Burgundy, in the rolling hills of Milly. It is here that we find Domaine D'Elise, a family business known for the quality of its wines. Among them is this Petit Chablis, a unique and fascinating interpretation of the terroir. Milly, with its characteristic limestone soils, gives the wine a distinct minerality and a beautiful freshness. On the other hand, the cool climate and the influence of winds from the nearby Serein river give it complexity and finesse. Made exclusively from Chardonnay grapes from the estate's most selected vineyards, this Petit Chablis reveals all the nobility and elegance of this famous grape variety. The grapes are harvested by hand at dawn to preserve their aromatic qualities intact. Vinification and ageing take place in cement vats, a traditional method that allows the natural characteristics of the grapes to be enhanced and the purity of the fruit to be maintained. In the glass, it has a pale golden colour, brilliant and inviting. On the nose, it reveals delicate citrus notes of lemon and a pleasant minerality that evokes the limestone rocks of Milly. In the mouth, it is characterised by its lively freshness, balanced acidity and persistent finish, inviting one to discover new nuances with each sip. Elegance and freshness make it an ideal companion for aperitifs and to accompany light, refined dishes. Perfect paired with oysters, raw fish and seafood carpaccio.
