With this Castel del Monte Riserva DOCG Augustale, CRIFO brings the best of Apulian winemaking tradition to our cellars and tables. Produced with pure Nero di Troia grapes, a historical vine and symbol of the territory, this important red wine is born on the limestone hills of the Alta Murgia, east of Ruvo di Puglia. An area renowned for its vocation for high quality viticulture. The vines, trained by spurred cordon with a density of 4,000 vines per hectare, are over 30 years old. So they produce few bunches... but of very high quality. After manual harvesting, the grapes are immediately taken to the cellar for meticulous selection of the bunches. Pre-fermentation maceration at a low temperature enhances the primary aromas of the vine and is followed by alcoholic fermentation in steel, which lasts between 10 and 15 days. This is followed by soft pressing and malolactic fermentation, also carried out in steel, to soften the wine and reduce its acidity. The subsequent ageing is a long and complex process. For 12 months, the wine rests in wood, divided between second-passage barriques and large 80-hectolitre barrels. This passage enriches it with woody notes, increasing its complexity and pleasantness. Finally, a further 6 months of bottle ageing is foreseen to allow the wine to reach a perfect balance before being marketed. Deep ruby red, almost impenetrable, the colour anticipates its complexity. The nose reveals a rich and varied bouquet, with notes of red roses, potpourri and fruit under spirits mingling harmoniously with spicy hints of cloves, cinnamon and cinchona, and balsamic tones of menthol and aromatic tobacco. In the mouth it is warm and structured, with velvety tannins and a pleasant freshness to balance it all. The finish is long and persistent, with toasty and balsamic notes that invite you to take another sip. As far as food pairings are concerned, this Castel del Monte Riserva is at its best with rich, structured dishes typical of Apulian tradition. Perfect with cavatelli with lamb ragout, braciole al sugo and baked sausage with cherry tomatoes.

This rosé, in fact, was born in the limestone hills surrounding Ruvo di Puglia, an area where viticulture finds fertile ground, thanks to a soil rich in minerals and a climate that, with its temperature swings between day and night, favours optimal ripening of the grapes. For its part, Bombino Nero is a unique grape variety, known for its ability to produce rosé wines of great elegance and freshness. Cultivated using the spurred cordon system, with a density of 4,000 vines per hectare, it produces bunches of excellent quality, thanks also to a low yield per plant. Harvesting takes place in mid-October, when the grapes have reached perfect ripeness, with a good balance between sugars and acids. At that point, the vinification process is carefully supervised to preserve all the freshness and delicacy of Bombino Nero. Maceration in the press, lasting 4-6 hours, is essential to extract the fruity aromas from the skins without overloading the must with colour. Then the flower must, the most valuable, is fermented in temperature-controlled steel tanks. Maturation on the lees for 60 days follows, followed by a further 2 months in the bottle. Intense and luminous cherry colour, fading to bright ruby shades, the nose reveals itself to be rich and inviting, with notes of wild strawberries, pomegranate and geranium, anticipating a fresh and crisp sip of red fruit. In the mouth, it impresses with its balance, lively freshness and pleasant minerality. A full-bodied rosé, it is capable of surprising for its depth and its ability to combine lightness and complexity. Gastronomic pairings range from seafood to land dishes. Try it with stuffed mussels, focaccia barese and seafood risotto. The wine's freshness blends perfectly with the flavour of the dishes, enhancing every mouthful.

The grapes are then quickly transferred to the cellar and undergo destemming, with the addition of carbonic snow to prevent oxidation. After a short period of maceration at a low temperature, during which the must remains in contact with the skins for 4-6 hours, fermentation takes place in steel. The wine then matures for 30 days on the lees before being bottled, acquiring complexity and finesse. Soft and bright in colour, the nose immediately reveals a complex and intense bouquet, dominated by hints of fresh red fruits, such as wild strawberries and cherries, accompanied by floral nuances. In the mouth, the intensity of the red fruits blends with good acidity, giving freshness and liveliness. The finish is persistent, with a subtle savoury note that adds depth and makes each sip particularly pleasant. Ideal to be enjoyed young, to fully appreciate its freshness and aromatic explosion, this rosé is particularly versatile. Perfect as an aperitif, it goes well with fish dishes such as seafood salads, linguine with scampi or seared red tuna.

Ruvo di Puglia is an area that stands out for its geographical and climatic characteristics. Situated on the limestone hills of the Alta Murgia, this place offers an ideal habitat for the cultivation of Primitivo, which, in turn, finds its highest expression here. This is the birthplace of Primitivo Puglia IGP Le Carrare, a beautifully pleasant red wine proposed by CRIFO. Primitivo, it may go without saying, is a grape variety known for its ability to produce robust, structured and richly aromatic wines. For Le Carrare, in particular, only grapes cultivated with the spurred cordon are used, which guarantees a low yield per plant but a higher concentration of sugars and aromatic substances in the grapes. With a density of around 5,000 vines per hectare, high quality grapes are obtained, ready to be harvested in the first ten days of September, when they reach the right balance between acidity and sugars. After harvesting, which is done manually, the grapes are taken to the cellar for careful selection of the bunches, followed by crushing and destemming. The fermentation maceration phase, which takes place in steel for 8-10 days at a controlled temperature, is crucial to extract all the colour and aromas from the skins. Subsequently, the must is pressed softly to preserve the delicacy of the tannins, and malolactic fermentation, also in steel, begins. This helps to make the wine softer and less angular. Ageing then continues in steel and then in the bottle, until a perfect balance is achieved. Le Carrare has a deep, impenetrable red colour. The bouquet is intense and complex, with predominant notes of plums and cherries under spirits, followed by hints of blueberry jam, spices and scents of Mediterranean scrub. In the mouth it is structured and warm, with well-balanced tannins and a softness that makes it extremely pleasant. Its depth and good drinkability are the characteristics that distinguish it and make it perfect to accompany rich and tasty dishes. Try it, for example, with grilled meat, pulled pork, lamb, ribs with BBQ sauce, brisket or, for those who love the simple and genuine dishes of our grandmothers, with baked lasagne or Sunday braised meat.

The vineyards are located at an altitude of about 400 metres above sea level, benefiting from a temperate and ventilated microclimate that favours a slow and uniform ripening of the grapes. The soil here is marly, slightly clayey and enriched by sandy components of karstic origin. This contributes to the wine's distinctive freshness and minerality. The basic grape variety is Bombino bianco, a native Apulian variety that expresses itself best in these lands. Cultivated with the traditional pergola, Bombino bianco is particularly appreciated for its ability to maintain good acidity even in particularly hot climatic conditions. Immediately after the harvest, the grapes are brought to the cellar and subjected to a soft pressing, in order to extract the so-called 'must flower'.
