This bubbly of great character was born in an area rich in history and biodiversity. We are located in the heart of Trentino, a region famous for the variety of its soils, which vary from valley to valley, offering a unique combination of basaltic, porphyritic and schist soils. These special soil conditions, combined with the Alpine climate with large temperature variations between day and night, give the grapes distinctive characteristics. Conti d'Arco's TrentoDoc Brut comes from vines grown on well-exposed and ventilated slopes that therefore benefit from perfect ripeness. Produced exclusively from Chardonnay grapes, the noble French grape variety is able to express its elegance and finesse at its best here, thanks to the region's unique climatic and geological conditions. A classic method, the grapes are hand-picked to ensure the integrity of the fruit and subjected to a gentle pressing to extract the free-run juice. The first fermentation takes place in stainless steel tanks during the autumn, followed by bottle fermentation the following spring. During this phase, the wine slowly re-ferments in contact with the yeasts for at least 24 months, developing complexity and finesse. Disgorgement and dosage complete the process, giving the wine balance and a slight softness. To the eye, Conti d'Arco's TrentoDoc Brut has a pale straw colour and a fine, persistent perlage. On the nose, it stands out for its fresh and fruity aromas, with notes of green apple, citrus and white flowers. In the mouth, it is harmonious, characterised by a pleasant acidity that gives it freshness and a taste persistence that invites one to take the next sip. A versatile and satisfying wine, this sparkling wine lends itself well as an aperitif, thanks to its freshness, but is also suitable to accompany a seafood menu, from raw to more elaborate dishes, such as tuna tartare, swordfish carpaccio or a refined seafood risotto.
