Pessac-Léognan is a wine-growing area and AOC, or Appellation d'Origine Contrôlée, located in the northern part of the Graves region. We are obviously in the Bordeaux region, and to be precise on the so-called left bank. Unlike most Bordeaux appellations, Pessac-Léognan is known for producing both red and white wines. In this case, Chteau Olivier offers an elegant classic Bordeaux blend, with Merlot clearly predominating, giving the finished wine richness and fruity overtones. With him Cabernet Sauvignon, necessary to add the right amount of tannicity to the finished product, and a small percentage, about 2 percent, of another grape variety typical of the region, Petit Verdot. Its contribution is essential to complete the picture, as it adds an unmistakable mineral note to the finished wine. Good even today, this Pessac-Léognan is not afraid of the passing years. It is today, and will be for a long time to come, a fabulous wine for the whole meal. Excellent with game and venison.
