Colosi amazes lovers of simple and immediate bubbles with this Bolentino, a quality wine produced from a selection of the best Grillo grapes harvested in its own vineyards in the Marsala area, near Trapani. From this ancient and prized grape, the Sicilian winery obtains a sparkling wine characterised by a fine perlage and a particular aromaticity. But let us proceed in order. The grapes are harvested during the second decade of September and pressed quickly to keep the rich aromatic heritage intact. The resulting sparkling wine base is then sparkling in an autoclave, according to the traditional Charmat method. The re-fermentation takes place at a controlled temperature and continues for at least 6 months, during which the wine remains in contact with its yeasts. The result is a wine characterised by a beautiful straw-yellow colour and an inviting bouquet of aromas, with recognisable notes of white flowers and bread crust. In the mouth, it is the distinct minerality that makes the difference. Freshness and savouriness, on the other hand, make this sparkling wine made in Sicily ideal for accompanying fatty foods, such as sliced meats and cheeses, but also fried fish and shellfish.

The skins only need a few hours of maceration in the must, even two or three, to give the final wine a bright pink colour that is, frankly, quite inviting. Terre Siciliane IGP, this red wine from Cantine Colosi is a young, ready-to-drink wine. A fine chalice that is made from 70% Syrah, international by origin but Sicilian by adoption, and Nerello Mascalese for the remainder. The latter is an autochthonous variety par excellence, typical of the eastern side of the island. In this case, the grapes come from two different areas. Part from Riesi, Caltanissetta, and part from Mazara, Trapani. Harvested when fully ripe and carefully vinified, this 'made in Sicily' red wine is only processed in steel tanks to preserve the freshness of the initial fruit. In the glass it has a beautiful intense ruby red colour. The nose is intense and fruity, with herbaceous hints and a typical spiciness brought by the Syrah. A young and fresh white wine that comes from the selection of the best vineyards of Capo Faro and Porri. Here, night breezes manage to create precious temperature excursions that uniquely enrich the organoleptic profile of the grapes. The result is a unique aromatic intensity, but also great elegance and softness on the palate. Secca del Capo, IGP Salina, is the result of a pure vinification of Malvasia grapes, grown on volcanic soils, rich in minerals. Harvesting begins between the end of August and the first ten days of September. The freshly harvested grapes are taken to the cellar to be gently pressed and undergo a delicate cryo-maceration phase. The must thus obtained is subjected to static clarification and fermented at a controlled temperature until all residual sugars are almost completely transformed. The wine is then stored in steel tanks for the subsequent ageing phase before meeting the bottle. Straw yellow in colour, with golden highlights, the nose reveals a pleasantly floral bouquet, with notes of exotic fruit and citrus fruits. In the mouth it is fresh and harmonious, elegantly soft and pleasantly long. Excellent as an aperitif, this fragrant white wine satisfactorily accompanies delicate seafood and shellfish dishes. It is hard to imagine a more territorial white than this Terre Siciliane IGP. It is called Mar'è and is one of the good products offered by Cantina Colosi. It comes from the processing of two indigenous grape varieties of the island, Inzolia and Catarratto, used in equal parts, complementing each other. The grapes come from the estate's vineyards in the area of Sciacca, in the province of Agrigento, and Salemi, in the Trapani area. Here the soils are clayey and the grapes reach perfect ripeness, enjoying the warm sunshine and Mediterranean climate of the island. Harvesting takes place in the second ten days of September. The grapes are immediately crushed to maintain fragrance and aroma. Then the must is fermented in stainless steel tanks at a controlled temperature for about two weeks, and in any case until the sugars are completely transformed into alcohol. At the end of fermentation, the wine stays in stainless steel tanks for about 3 months for the maturing phase. The wine is then bottled and left to rest for at least another two months before being released for sale. Intense straw yellow in colour with greenish highlights, the nose reveals a wine characterised by a bouquet of white flowers and yellow-fleshed fruit, followed by notes of green tea. In the mouth, however, the wine is surprisingly fresh, savoury and fruity. Endowed with excellent persistence, it has a good balance between softness and acidity. Ideal as an aperitif, it also goes well with fish dishes, risottos and seafood.

In the mouth it is pleasantly savoury, fresh and harmonious. Balanced and with good persistence. Ideal to uncork as an aperitif, it is also perfect with white meat dishes and cured meats.

After the harvest, the grapes are soon taken to the cellar to be crushed, maintaining fragrance and primary aromas. The must is then fermented in stainless steel tanks at a controlled temperature and, at the end of this phase, the wine is aged for at least three months in stainless steel tanks, followed by a further two months in the bottle. Pale straw yellow in colour with greenish highlights, the nose reveals fresh aromas, with sensations of white flowers and a generous fruity component. In the mouth, however, it reveals a pleasantly balanced wine, between fruit and freshness, and characterised by a long persistence, capable of prolonging the pleasure of drinking for several minutes. Perfect with fish and seafood dishes, this Sicilian white is also excellent as an aperitif.
