We are located in the magnificent and iconic hills of the Langhe, in Piedmont. This is where Sirena, Langhe Arneis DOC by Ca' Viola, a white wine that captivates with its delicacy and harmony, was born. The grapes, pure Arneis, that make up Sirena come from vineyards rooted in limestone-clay soils, rich in minerals, where the climate is characterised by harsh winters and warm, breezy summers. These are ideal conditions for ripening the grapes, guaranteeing them a perfect balance between sugars and acidity. Arneis, an indigenous Piedmontese variety, is distinguished by its finesse and aromaticity. Harvesting takes place at the beginning of September, preserving the freshness and integrity of the fruit. Once in the cellar, the grapes are softly pressed and the must is fermented in steel at a controlled temperature for approximately 10-12 days. In the glass, it reveals a pale straw yellow colour with greenish reflections. On the nose, an intense and fragrant bouquet, where scents of wild flowers, such as chamomile and white flowers, combine with delicate notes of white-fleshed fruit, such as peach and pear. Then hints of aromatic herbs and citrus fruits that give the wine a fresh and lively character. In the mouth, it conquers with its harmony and balance. The residual sweetness is well balanced by a lively acidity. A fresh and pleasant sip, with hints of fresh fruit and a long finish. Ideal as an aperitif, it accompanies fish or vegetable starters, risottos or pasta salads.

Rangone is a Langhe Nebbiolo DOC produced with grapes from one of the most famous communes in the world. We are, in fact, in Dogliani where the best plots of land give life to the legendary Barolo and where Nebbiolo is able to express itself at its best. Accomplice a varied soil and a unique microclimate. Vinified with indigenous yeasts and long maceration of the skins with submerged cap to extract all the color possible from the grapes, this Nebbiolo rests in large barrels for over a year and a half before meeting the bottle. The result is a wine characterized by a beautifully intense ruby red colour with garnet hues. The nose is remarkably broad and complex, with notes of underbrush and wet earth in clear evidence. In the mouth, however, it is more elegant than powerful, with silky, well-integrated tannins. A nice, satisfying red that on the table always knows how to monopolize attention. A Barolo able to show its best already, at a young age. After two years of refinement in large casks, this wine has a beautiful ruby colour with light garnet reflections. The nose reveals the typical notes of Nebbiolo that recall flowers and in particular violets and roses. Then small red fruits and, on the finish, a pleasant balsamic sensation. In the mouth the texture is thick and silky. A wine with great balance in all its components, with soft and velvety tannins.

If the famous Barturot was the first wine produced by Beppe Caviola, the Dolcetto d'Alba Vilot represents his younger brother, certainly not his inferior one. Produced for the first time in 1996, this Dolcetto represents, in the company's philosophy, an everyday wine. The good bottle capable of giving great satisfaction on a thousand different occasions. Produced in about 20 thousand units, this Dolcetto comes from a careful vinification of grapes from different vineyards in Montelupo Albese. Matured in steel and bottled without prior filtration, this Dolcetto is a deep ruby red colour in the glass. The nose immediately reveals its fresh and youthful character. There are fruity notes reminiscent of red and black fruits and in particular ripe blackberries. In the mouth it is agile, very smooth and well balanced. A sparkling wine, simple but not boring. A nice glass suitable for all palates that has only one flaw: it always finishes too soon. The classic wine of which one should always keep a small supply on hand.

Clem is the first Riesling in the history of Ca' Viola. It was born in the heart of the Langhe, an area universally recognised for the quality of its red wines, but which has also proved to have excellent potential for the cultivation of special grape varieties such as Rhine Riesling. The marly limestone and clay soils, rich in minerals, combined with the average altitude of 600 metres and southern exposure, in fact, create an ideal microclimate for the ripening of this noble grape variety. Here, the grapes find the perfect balance between sugars and acidity, developing complex and mineral aromas. After all, Rhine Riesling is a grape variety that expresses itself best in cool climates and mineral soils. The grapes, harvested by hand between the third decade of September and the first of October, are carefully selected to preserve their freshness and integrity. After a soft pressing, the must decants statically at a controlled temperature. Fermentation takes place in temperature-controlled tanks for 15-20 days, preserving the floral and fruity aromas of the grapes. This is followed by 10 months of ageing in steel 'sur lie', i.e. on the fine lees, which gives the wine complexity and harmony. Brilliant yellow in colour, the nose reveals an intense and fragrant bouquet, where scents of white flowers, such as acacia and jasmine, combine with delicate notes of white-fleshed fruit, such as peach and pear. In the mouth, Clem captivates with its freshness and minerality. The lively acidity, typical of Riesling, perfectly balances the residual sweetness, resulting in a pleasant and harmonious sip. A wine capable of evolving over time, fascinating with its many facets and extraordinary longevity. Ideal as an aperitif, but not only. It accompanies fish or vegetable hors d'oeuvres, to be tried with light first courses, risottos and pasta salads.

You cannot think of the hills of Alba without dwelling on the quality of its Barbera. It is a whole. And you can't think of Ca' Viola without imagining a dinner with friends with a bottle of Brichet to warm the hearts and spirits of all the diners. Created in 2002, it is a classic Barbera, characterized by a nice structure and a hint of acidity that makes it even more pleasant to drink. A wine of tradition that honours one of the most internationally loved grape varieties of the region. In the cellar, it is worked with rigour. Fermented without the use of selected yeasts, Brichet is the result of a 15-day maceration and fermentation in temperature-controlled tanks. This is followed by a year's refinement in large casks and bottling without prior filtration. The result is a wine characterized by an intense ruby red colour with deep violet hues. The nose is a jubilation of red fruits, notes of underbrush and sweet spices. In the mouth, as mentioned, it is pleasantly fresh and drinkable. A very enjoyable wine that gives its best when served at the right temperature, maximum 15/16 degrees, combined with one of the many, good, traditional dishes. With the bollito misto, just to give an example, it is to die for.
