You cannot think of Friuli, from a viticultural point of view, and not immediately fly with your mind to the good Sauvignon Blancs of Collio. Good wine is made above all in the countryside. If the harvested fruit is healthy and perfectly ripe, more than half the work is done. And this is why the harvest in the 'Ronco dei Sassi' vineyard is carried out strictly by hand, so as not to damage the delicate film that covers the swollen berries of the best Sauvignon. Then vinification in steel, with strict temperature control. Thus was born this Collio Sauvignon, characterised by a brilliant straw-yellow colour with light green-gold tones. The nose has a typical bouquet, with hints of green pepper and tomato leaf, as well as peach and sage. In the mouth, however, it is elegant, mineral and full-bodied. Rich Cabernet Sauvignon grapes from the flat vineyards bordering the banks of the River Isonzo. It is from these grapes that Ascevi Luwa makes the wine it offers here. As always, the harvest is a decisive moment for the quality of the final wine. That is why, here too, the harvest is carried out strictly by hand, with careful selection of the bunches in the field so that only the best fruit reaches the cellar. The ripest ones, of course, but also the most intact and healthy ones. Everything is done with the utmost respect for the raw material. In this case, after vinification, the wine is left to rest for a few months, about a year, in oak barrels. This slow refinement ensures that it reaches the right level of complexity and pleasantness. In the glass it has a beautiful intense ruby red colour, tending to garnet. The nose is herbaceous, as is typical for the variety, with clear nuances of berries. In the mouth, on the other hand, it demonstrates good body, a discreet tannicity that does not, however, detract from a nice overall softness. Perfect in combination with grilled meats and roasts.

Rupis is the locality, near San Floriano del Collio, where the family runs the vineyard from which the Chardonnay grapes used to make this wine come. We are in Collio and the white grapes are the absolute protagonists. The processing of this wine begins with careful harvesting by hand and vinification in steel at a controlled temperature. Friuli DOC Pinot Grigio, produced in San Floriano del Collio, in the province of Gorizia. It is proposed by the Ascevi Luwa winery, a medium-sized family business strongly rooted in its territory. 100% Pinot Grigio, therefore, from estate vineyards with yields per hectare between 80 and 85 quintals. Good selection, therefore, and great care in bringing only the best grapes to the cellar. Here, vinification takes place exclusively in steel, with soft pressing of the grapes, cold static decantation and subsequent fermentation for about 20 days at a controlled temperature. At the end of the transformation, the wine undergoes ageing, again in steel tanks, for about 6 or 7 months until bottling. In the glass one discovers a wine characterised by a brilliant straw-yellow colour with light golden reflections. On the nose, the bouquet is floral, with notes of citrus and white-fleshed fruit. In the mouth, on the other hand, one discovers a wine characterised by a fresh, mineral, medium-bodied flavour. A beautifully fresh white, this Pinot Grigio 'made in Friuli' is perfect with aperitifs, delicate first courses and even meat and fish main courses.
