For lovers of 'non-extreme' withering, Ripasso is undoubtedly an excellent choice. A younger brother of the lord of Valpolicella, the noble Amarone, this wine, in Speri's version, comes from the company's own vineyards, located in Valpolicella Classica. We are located between 120 and 350 metres above sea level, specifically in the municipalities of San Pietro in Cariano, Fumane and Negrar. In this case, the basic blend is composed of Corvina Veronese for 70%, Rondinella for 20% and Molinara, with other indigenous varieties, for the remaining 10%. After manual harvesting, the grapes are taken to the cellar for immediate crushing, followed by maceration at a controlled temperature. Then, at the beginning of March, this Valpolicella Classico wine is repassed over the Amarone marc. This is followed by 12 months of maturation in 20-hectoliter Slavonian oak casks and a further 6 months of bottle ageing. Intense red, on the nose this Ripasso presents very clear scents of red fruit, spices and cocoa. In the mouth it is warm and soft, well balanced by round tannins. An extremely versatile wine, it is ideal with meat and cheese dishes.

It is a great classic, in name and in fact. A Classic because when one thinks of an easy but rewarding red wine, Valpolicella is an almost absolute must. And Classico because in this case it is a Speri wine produced from grapes harvested in the historic area of the appellation. Vineyards located between 12 and 35 metres above sea level, in the municipalities of San Pietro in Cariano, Fumane and Negrar. The blend, which is also classic, is composed of Corvina veronese for the vast majority, then Rondinella for 30% and Molinara for 10%. Harvested by hand, the grapes are immediately taken to the cellar for processing. Crushing and destemming, then fermentation with maceration at a controlled temperature. At the end of processing, the wine matures in steel and vitrified cement vats for about 4 months. This is followed by bottling and a further period of ageing in the bottle. All in full respect of the starting raw material. All with respect for tradition. The result is a wine characterised by a beautiful ruby red with violet hues. On the nose, the aromas are pleasantly vinous and intense, of violets and cherries. A medium-bodied, fruity wine, to be drunk young, it is ideal as an accompaniment to hors d'oeuvres, soups, pasta and typical Mediterranean dishes.
