Contessa Rosa Brut Rosé represents the true spirit of Fontanafredda. Dedicated to Countess Rosa Vercellana, known as the "Bela Rusin", this sparkling wine, made from grapes grown at high altitudes, expresses the combination of aromatic freshness and complexity typical of great wines such as Barolo. Its base cuvée is composed of Pinot Noir and Chardonnay grapes from the Langa of Alba and Asti. Part of the Pinot Noir grapes are pressed and left in contact with the skins in temperature-controlled tanks for one or two days and, at the end of maceration, a soft pressing is carried out. This produces a rosé must which, together with the white must, is fermented in stainless steel tanks at a low temperature and, at the end of this phase, the wine obtained is left in contact with its fine lees until the following spring. At this point, the cuvée is made by blending the wines from the two fermentations. The second fermentation, in the bottle, continues with no less than 48 months of maturation on the lees. The real peculiarity of this classic method, however, lies in the unique recipe of its "liqueur d'éxpédition" which contains, among other ingredients, a few drops of Barolo DOC 1967. Pale pink in colour with onion skin highlights, the nose has aromas reminiscent of orange blossom, pomegranate, chinotto and black plum, ending with ginger, nutmeg, lavender, basil and a background of custard. On the palate, however, one discovers a fine and persistent bubble, but above all a perfect balance between all the components of the wine. Excellent as an aperitif, thanks to its personality, it can accompany an entire meal with class.

In Barolo, the 2017 vintage will be remembered above all for the late spring frost that left the vine-dressers shivering, for the somewhat extreme weather conditions, with a hot summer, but fortunately characterised by cool nights, and a fair amount of rain in early September that allowed the Nebbiolo to ripen perfectly. The wines ‘ Simply unforgettable. rated with top marks by the experts. Rich Barolo, also in terms of colour, with excellent tannic concentration and perfect overall balance. The one we offer here, Vigna La Rosa 2017 from Fontanafredda, is a fine example. Good today but capable of evolving well in the cellar for an eternity, this Barolo DOCG should always be bought in several units. One bottle could be opened immediately. The others, on the other hand, should remain jealously guarded in the cellar waiting for the right occasions. Matured in medium-capacity oak casks for around 24 months before being bottled for a further 12 months in glass, this Barolo now has a beautiful ruby red colour with garnet highlights. The bouquet is ample, gentle but intense. Hints of withered rose, violet, tobacco, undergrowth and light vanilla are easily discernible. In the mouth, then, the texture of the tannins is dense and thick. The entry is soft, almost velvety, and then explodes into a sensation of fruit well balanced by acidic freshness. The aftertaste is very long and rich in flavour. A perfect meditation wine, perhaps paired with a chocolate dessert, it is also a perfect Barolo for the whole meal. The important thing is that the menu is the right one. Based on red meats, with long cooking times.

The name Marne Brune refers to the unique soil in which the Nebbiolo plants used for its production have their roots. Nebbiolo d'Alba DOC, Marne Brune comes from a careful processing of the best grapes harvested between Vezza d'Alba, Montaldo and Monteu Roero. After vinification, the wine matures for about a year in Allier oak barriques and then in the bottle for a period of 6-7 months. This is sufficient time to soften the typical sharpness of the Piedmontese vine, without excessively altering the initial fruit. What best characterises this wine, in fact, is its fragrance, which is easily observable from its colour, a more or less intense ruby red depending on the vintage, and which can also be detected thanks to the primary scents that distinguish it. It is easy to recognise, for example, the more delicate notes of flowers and small fruits of the undergrowth. In the mouth, on the other hand, one discovers a wine characterised by a fine personality, with a dry flavour. A fabulous everyday wine, it is ideal in combination with main courses of a certain importance, preferably meat-based. For an afternoon snack, on the other hand, it can also be served with a simple board of cold meats and medium-aged cheeses.

Those who drink Barolo do not drink a simple wine. Rather, they drink the unique and inimitable fruit of a territory. And for this reason, there are those who prefer the wine from a certain municipality. Others prefer the typical version from another area. And there are those who seek complexity, choosing wines that are produced by blending the grapes of several distant vineyards. For this reason, special selections have been created within the denomination. And Fontanafredda, among others, was one of the first wineries to decide to make the most of the peculiarities of its terroir. Since 1988, in fact, they have been the first to produce this communal selection, an identity Barolo that represents the power of the Serralunga terroir and the elegance of the Fontanafredda style, floral, balsamic, vibrant and fresh. After vinification, this Barolo DOCG rests for 24 months in oak barrels and 12 months in cement. Only then is it ready to be bottled. A great red wine from the territory, capable of expressing its best characteristics right from the start but which also has the capacity to age, or rather mature and evolve, for a decidedly long time. Even 25/30 years, according to its producers. Today, in the glass, it has a beautiful ruby red colour with garnet highlights. The bouquet is clean and intense, with sweet sensations and hints of spices, dried rose and undergrowth. The taste is soft, full, velvety, harmonious and vibrant. A wine like this should not be uncorked if the occasion is not the right one and if there are no good traditional dishes on the table. Important first and second courses, as important as the wine, obviously based on red meat. But also medium-long aged cheeses and, for the sweet tooth, a little dried fruit and a sliver of chocolate. After all, a wine like this should not be drunk. It should be sipped, slowly, in order to grasp all the nuances of its broad bouquet.

It is called Val di Tana and is a Roero Arneis DOCG, offered here by the fine Piedmontese winery Fontanafredda. 100% Arneis grapes, this white is typical of the Roero hills, an area otherwise known for the quality of its red wines. Super-soft vinification in temperature-controlled stainless steel vats, this white wine is aged, again in stainless steel, in contact with its fine lees, until the spring following the harvest. At that point, the wine is bottled and, after a couple of months, is ready to drink. In the glass it has a beautiful intense straw yellow colour with greenish reflections. An ancient variety, indigenous to the Tortonese hills. This is the Timorasso, now brought back to life under the name of Derthona. A white wine of great charm, elegant and powerful. A white wine for true connoisseurs, endowed with a natural minerality and an incredible capacity to mature for a long time. The grapes, in this case harvested strictly by hand, are delivered to the winery in 20 kg crates. Immediately destemmed and crushed, it is cold macerated for 12 hours. At the end of this phase, after a soft pressing, the must is passed into steel vats for the fermentation phase. At the end, the wine remains in steel for about 10 months, at a low temperature and in contact with its fine lees, for a refinement phase and to increase its complexity. This reveals a beautiful goblet characterised by a golden colour with greenish highlights. On the nose, the bouquet is ample and immediately calls to mind exotic fruits and sweet white-fleshed fruit. In the mouth, on the other hand, it is pleasantly fresh, enveloping and harmonious, with a long taste persistence. It is a fabulous aperitif, but also at table it always knows how to make a good impression. With fish-based hors d'oeuvres, for example, or with seafood risotto or simple platters of cold meats and fresh or slightly matured cheeses.
