A South African white, produced by the Jordan winery, Inspector Péringuey Chenin Blanc comes from the Stellenbosch region in the Western Cape. Stellenbosch, it should be remembered, is one of the most prestigious appellations in South Africa. Approximately 16 thousand hectares, which include not only the town of Stellenbosch, but also Paarl and Franschhoek. Mediterranean climate, with warm summers and mild winters, and mineral-rich soils, perfect for growing quality grapes. The name of this Chenin Blanc is reminiscent of Louis Albert Péringuey, the Western Cape vineyard inspector of the 19th century, who led the fight against phylloxera and supervised the importation of American rootstocks. Chenin Blanc is known to be an international grape variety, originally from France, introduced to South Africa during the 17th century and since then among the most appreciated for its great versatility. Here, the vineyards are located at about 220 metres above sea level and enjoy very favourable climatic conditions, kissed by Atlantic breezes from False Bay. The vines here are close to 40 years old. Chenin Blanc produced using French oak barrels. After a soft pressing, followed by cold decanting for 2 days, the must is fermented in second and third passage barrels and, at the end of processing, the wine is left to mature, again in barrels, for about 7 months. Approximately 38% of the wine, however, is fermented in steel and is added to the barrel-fermented part before bottling. Brilliant straw yellow in colour, the nose presents intriguing aromas of fresh fruit, such as white pear, quince and pineapple, accompanied by spicy notes. On the palate it is fresh, savoury and mineral, with a long, lingering finish.A versatile wine, it is perfect with smoked salmon, baked sea bass and grilled prawns. But also soft cheeses and lightly spiced dishes.

Only Chardonnay, when it is cultivated with all the trappings, but especially when it is worked to perfection, is capable of producing wines of this pleasantness and complexity. Barrel Fermented Chardonnay, produced by Jordan, is a Chardonnay from the Stellenbosch area. The company's vineyards are located in the hills, about 300 meters above sea level. This area enjoys very favorable climatic conditions, as it is constantly reached by Atlantic breezes coming from False Bay. The cooler area, facing south and east, is home to white grape varieties. Here, the special microclimate gives Chardonnay an extraordinary uniqueness. This South African Chardonnay, moreover, is the result of processing vines with an average age of 20 to 35 years. In the cellar, fermentation takes place in Nevers and Bourgogne French oak barrels. The wine is then aged on its lees for a period of about 9 months. Instead, only a small portion, about 8 percent of the mass, is fermented in steel tanks and then added to the matured wine, ensuring a perfect balance in aromas. Both tank-aged and barrel-aged Chardonnay undergo malolactic fermentation. A multifaceted Chardonnay, this South African white presents itself in the glass as a beautiful straw-yellow color with golden reflections. Intense and elegant aromas, with notes of ripe fruit, also tropical, and hints of butter, the mouth reveals an elegant note of lemon cookie and very ripe oranges. An important wine, it should always be paired with dishes of some structure. Whether they are fish or meat, the important thing is that they have the right personality. Excellent with veal tonnato.

Cold Fact, this is certainly something few people know, is an album by singer-songwriter Sixto Rodriguez. Not too well known in these latitudes, it is even considered a cultural phenomenon in South Africa, also known internationally through the film "Searching for Sugar Man." Cold Fact is also a play, used by Jordan to identify the "cold soak" technique, or "pre-fermentation maceration," used to bring out the intense flavors of Sauvignon Blanc, a grape variety known to be highly aromatic. The result is a wine characterized by incredible freshness and aromatic pleasantness. Straw yellow with obvious greenish hues, the nose reveals aromas of black currant and fig, balanced by a complex fruity and sweet structure of Provençal herbs. Perfect correspondence in the mouth with what was perceived earlier. This aromatic white is simply ideal with vegetarian dishes as well as salads and pastas dressed with fresh vegetable sauces, fish and fresh cheeses. For lovers of freshness and strong aromatics, however, this Sauvignon is suitable right from the aperitif ritual.

Here, the area is characterised by a Mediterranean climate, with hot summers and mild winters, and clay-limestone soils, which give the wines a special structure and minerality. Pure Sauvignon Blanc, in this case the grapes come from historic vineyards that are almost 40 years old. Winemaking in the cellar is traditional, although the producers experiment with some 'innovative' techniques here. 67% of the must is fermented in 228-litre French oak barrels of second and third passage, while the remaining third is fermented in 400-litre Italian amphorae. The amphora has the natural ability to keep the marc in constant suspension during fermentation, giving the wine greater complexity and structure. The must is then matured 'sur-lie', i.e. in contact with its own yeasts, for about 6 months, with occasional punching-down. Sulphites are only added to the wine at bottling. In the glass it has a beautiful, brilliant straw yellow colour. The nose presents intense and complex aromas. It recalls elderflower, melon and yeast. In the mouth, however, it is fresh, savoury and mineral, with a delicate but long finish. A versatile wine, it pairs well with a wide range of dishes. It is perfect with fish starters, white meats and seafood dishes.
