Its name describes the soul of the Colombo winery and recalls the desire to embark on a new project, a new path for viticulture in the area. A wine defined as "feminine", warm and harmonious, it comes from a pure processing of Pinot Noir grapes from hillside vineyards located between 250 and 400 metres above sea level. Once in the cellar, the grapes undergo alcoholic fermentation in stainless steel, followed by malolactic fermentation, in this case carried out in wood. Finally, the wine matures for 15 to 18 months in tonneaux and large barrels. Only then is it bottled to continue with refinement in glass for a minimum of 6 months. In the glass it has a beautiful bright ruby red colour, with slight garnet reflections that tend to appear with age. The nose is reminiscent of well ripe small red berries, such as cherry and sour cherry, followed by floral notes of dog rose. Then sweet spices of vanilla and liquorice of great intensity. In the mouth it is warm and harmonious, with soft sensations linked to elegant but still firm tannins. Good structure and persistence that presage a wine destined for a long evolution.

A very structured wine, this Pinot Noir undergoes a long ageing process and conceals a balanced minerality and a delicate final freshness. Pentaris, Piedmont DOC, Metodo Classico Millesimato, is one of the sparkling wines proposed to the Colombo winery, thanks to the collaboration of oenologist Riccardo Cotarella. It comes from a blend of 50% Pinot Noir and 50% Chardonnay grapes. These grapes are selected in the vineyard, hand-picked in small crates and come exclusively from the vineyards cultivated in Bubbio, in the province of Asti, in the high hills over 250 metres above sea level. After harvesting, the grapes are taken to the cellar to be subjected to a very soft pressing. The best must undergoes static clarification, followed by alcoholic fermentation at a controlled temperature in stainless steel tanks. Secondary fermentation takes place in the bottle, according to the Metodo Classico, for approximately 40-50 days in the cool underground cellars of Colombo, followed by a lengthy period on the lees for a minimum of 30 months. This is followed by a traditional 'remuage' on 'pupitre' and 'dégorgement ì la glace'. Intense straw yellow colour, fine and very persistent perlage. The nose is intense, decisive, deep and of enveloping elegance. Exotic fruits, acacia honey and mineral hints reminiscent of talc and powder. In the mouth, it is well balanced between body and freshness, with an excellent structure. In the mouth, it reveals an interesting savouriness and minerality, thanks also to the soft and non-aggressive dosage. The persistence is excellent. Good as an aperitif, it goes well with a fish menu or main courses of white meat.

Pinot Noir lovers, step forward. The one proposed here by Colombo, in fact, is a fantastic example of pure vinification of the noble Burgundy grape variety. Grapes harvested in the estate's vineyards, located between 250 and 400 metres above sea level, this Piedmont AOC is the result of super careful processing in the cellar. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, as does the subsequent malolactic fermentation. At the end of the transformation, the wine is bottled and continues with a short ageing phase in the bottle for about 6 months. The result is a fresh, young wine. An intriguing expression of Pinot Noir that enhances the most immediate characteristics of the variety. Brilliant ruby red in colour, its bouquet evokes inviting scents of ripe red berries such as cherry, black cherry and floral notes of dog rose. A very pleasant wine that goes well with cheeses and cured meats, but also with delicate meat dishes.

Natusia, Piedmont DOC Metodo Classico, is one of the good sparkling wines produced by the Colombo winery. 60% Pinot Noir and 40% Chardonnay, the grapes are hand-picked in small crates and come exclusively from the company's vineyards in Bubbio, in the province of Asti. Alta Langa DOCG, this Metodo Classico Blanc de blancs proposed by Colombo is a wine characterised by great balance and excellent persistence. It is produced solely from Chardonnay grapes from vineyards cultivated in the high hills. Hints of flowers and white-fleshed fruit. Then bread crust and hazelnut butter that give an enveloping nose and a broad and complex bouquet. In the mouth, finally, the wine reveals itself to be elegant, with great balance and excellent persistence.

Intense, decisive, deep and with great elegance, this Metodo Classico releases mineral hints and envelops with the typical notes of Pinot Noir, such as raspberries, redcurrants and spring red flowers. In the mouth, it is well balanced between body and freshness, with excellent structure. It also displays an interesting savouriness and distinct minerality, as well as great persistence. The dosage is soft and not aggressive.
