White, but certainly not a simple wine. Efeso, Calabria IGT, proposed here by the Librandi winery, one of the most important and historic in Calabria, comes from a pure processing of Mantonico grapes. This rare and ancient vine is considered indigenous to Calabria and is cultivated mainly in the Crotone area. The name of the wine refers to the city of Ephesus where, according to legend, the philosopher Pythagoras landed after leaving the island of Samos. This white wine is the result of super careful processing of the grapes harvested in the estate's vineyards. It starts with a soft pressing of the grapes, to preserve their integrity and aroma, followed by a slow fermentation in French Allier oak barrels. Here the wine remains in contact with its yeasts for about six months, acquiring complexity and structure, as well as toasted and vanilla notes. This is followed by bottling and a further six months' rest in the cellar before release. Straw yellow in colour with golden hues, the nose reveals itself to be incredibly fruity and floral, with distinct hints of white peach, green apple, white flowers and honey. There are also citrus notes of lemon and orange, as well as pleasant mineral nuances that lend freshness and elegance. In the mouth it is soft, creamy and enveloping, with a good acidity that makes it balanced and pleasant. The finish is savoury and almondy, with a good aromatic persistence. A good wine even today, it has a good capacity for ageing. If stored well, it can continue to evolve positively for up to eight years. On the table it is a splendid accompaniment to fish-based main courses, such as mixed grills and fried food. Also excellent with cheeses, more or less mature.
