Here the reds, characterized by a strong Mediterranean character, are made from 100 percent Tempranillo grapes, often from old vines rooted in soils that are poor in substance and therefore capable of yielding clusters of beautiful concentration. Tintafina, in particular, matures for about a year in French oak barrels after vinification, gaining complexity and depth. A deep cherry-colored red with beautiful purplish reflections, this "caliente" tinto wine is capable of saturating the whole room when uncorked with its aroma. Aromas of berries, red fruits, vanilla and spices. All very powerful and intense. But at the same time also elegant. "El Gordo del Circo," literally "the fat guy in the circus." Grapes harvested in old vineyards in Olmedo, in the province of Valladolid, where this interesting native grape variety expresses its full character. Straw yellow, its color, El Gordo (del Circo) presents a nose with medium intensity with exuberant notes of grapefruit, ripe pineapple and lime. As the minutes pass, then, herbaceous and slightly mentholated memories also appear. The beauty, however, comes later, when the wine meets our mouth. This red wine is made from the grapes of a single 80-year-old vineyard of unknown varieties. The vineyard in question is located on the right side of the road bordering DO Jumilla and DO Alicante and thus, for years, considered table grapes, underpaid and mistreated. Locals call them "The Bastard Vineyards." It took the creativity of Casa Rojo's Wine Gurus to decide that those grapes deserved, after years of neglect, to be enhanced. That is why they decided to select and harvest those vineyards, producing this unique wine. Harvested by hand in the second half of September, the clusters undergo double selection on arrival at the winery, followed by destemming. Fermentation in temperature-controlled stainless steel tanks, after malolactic fermentation, the wine ages in new French oak barrels for 6 months. An attractive ruby red color, this wine is fresh and balsamic on the nose, highlighting notes of ripe black fruit and fine leather details from its passage in wood. In the mouth it is a great classic, with soft tannins and a long, mouthwatering finish. For lovers of impossible challenges, this is the right wine to uncork at your next barbecue.

Gabacha is a 100% Sauvignon Blanc. But not the classic aromatic white. Starting with vineyards that are between 20 and 30 years old, and located at an elevation of about 750 meters above sea level. A place more unique than rare, with a very special microclimate. The grapes are harvested by machine, overnight, to ensure that the heat does not go to ruin such valuable raw material in any way. After harvesting, then, the grapes are macerated briefly to cold extract all the aromas and flavors of the berries. Then, for the next stage of fermentation, only free-run must is used, and at the end the wine is aged for no less than three months on its own yeasts. Straw yellow color, clean and transparent, the nose is an explosion of aromas, with great intensity. Tropical notes, such as mango and pineapple, accompanied by subtle hints of citrus and plant aromas characteristic of the variety. In the mouth, it is ample, fresh, with intense acidity that is perfectly balanced with subtle residual sweetness. A complex and intense white, it requires a rich pairing in terms of flavor. 16,000 bottles. Not one more. This is the production of this Murcian rosé, proposed by Casa Rojo. It is made from Monastrell grapes for the vast majority and Garnacha for the remainder. It is the result of a particular technique, the "salasso", which is used to produce both full-bodied red wines and fruit-rich rosés. In this case, the vineyards where the grapes come from are all located around the winery and are harvested when fully ripe, with careful selection of the best bunches. To the eye it is a soft salmon-pink colour, with abundant fine tears. The nose reveals an intense and persistent bouquet, with notes of red fruits and white flowers, accompanied by hints of peach. On the palate, thanks to its ageing on the lees, it impresses with its silkiness, with clearly recognisable aromas of strawberry and citrus fruits. A broad and persistent wine, it is super pleasant and easy to pair. As an aperitif, it goes well with both fish and meat dishes. Also perfect with pizza.

Trepat is a grape variety originating in the Spanish region of Catalonia, and more specifically in the Conca de Barberì area in the province of Tarragona. Its name is believed to derive from the Catalan word 'trépate', meaning to climb or climb, in reference to the particular bearing of the ripe bunches on the plant. A red grape variety, it is mainly used to produce dry red wines. In this case, however, Casa Rojo uses it as the basis for a Cava sparkling wine. It starts with a manual harvest in the first week of September, when the grapes have reached an optimal degree of ripeness. In the cellar, there is a quick 2-hour maceration on the skins, which allows sufficient extraction of aromas and colour. This is followed by soft pressing and fermentation, carried out in this case in stainless steel tanks at a low temperature. Secondary fermentation takes place in the bottle, according to the Metodo Classico. Pale pink colour with brilliant golden reflections, the bubble is delicate and small. Aromas of good intensity, with aromas of small red fruits combined with citrus fruits, butter and delicate pastry notes. On the palate it is fruity and creamy, with hints of liquorice and a good acidity that gives it a fresh and persistent finish. The black sheep of bubbles! Limited production.
