Rohesia, an inviting rosé from Negramaro grapes offered here by Cantele, has all the characteristics to belong to this category. Cherry pink, the nose reveals an intense and persistent perfume, with hints of red berry fruit, strawberry, peach and cherry. But also floral, of rose and violet. The most attentive, however, will not miss the slight hint of flint that comes to make the whole decidedly more complex. Round, elegant and haughty. In the mouth, it reveals itself to be a powerful wine, but with great freshness and flavour. Technically it is an IGT Salento. 100% Negroamaro grapes from the municipality of Guagnano, in the province of Lecce. Harvested in the second half of September, after vinification the wine matures on its lees for about 3 months, acquiring a pleasant complexity that in no way detracts from its freshness. From aperitif to table, this rosé impresses with its versatility. Excellent with delicate and refined raw fish dishes, for lovers of simplicity it can also be served with a simple caprese, with tomato and mozzarella.

The Chardonnay grapes used by Cantele to produce this stunning white come from Guagnano. We are in the province of Lecce, where the vineyards are already established with a modern conception and high planting density. A white that does not fear the passage of time, this Teresa Manara Chardonnay comes from grapes harvested when fully ripe in the second half of August. After soft pressing, the must is cooled to promote natural clarification. Alcoholic fermentation begins in stainless steel tanks but ends in oak barriques, where the wine then remains for at least six months in contact with its fine lees. Amativo is a rich and concentrated red wine with a remarkable capacity for ageing. Only great wines can be dedicated to a great woman. Like this Teresa Manara, wife of the company founder, who in years that were not easy, for love decided to leave her homeland to seek her fortune in the heart of Puglia. This incredible wine, the result of a late harvest of Chardonnay grapes, is also dedicated to Teresa Manara. The grapes, harvested by hand in small containers, are gently pressed to prevent the golden skins from darkening the must. The first part of the alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Then, the still fermenting must is racked into barriques to complete its transformation. Finally, at the end of fermentation, the wine rests 'sur lie', on its yeasts, in French oak barriques, half new and half second-passage. After about 12 months, the wine is finally ready to be bottled. Excellent immediately, this late harvest Cantele is capable of evolving naturally even for 8 or 10 years. Provided, of course, that it is stored well, in a cool place and protected from light. Suitable as an aperitif, it is the white wine to serve when you want to treat yourself to a special evening. Excellent with all fish dishes, it has sufficient body and character to also stand up to pairing with white meat main courses.
