The term Bin is used by the Penfolds winery to identify specific wines within their collection. Originally, Bin referred to the cellar numbers where the wines were stored and aged. Today, each Bin represents a particular cuvée. For example, this Bin 407 stands for a high quality Cabernet Sauvignon produced according to specific winemaking criteria and from specific wine-growing regions. These numbers have become a distinctive mark of Penfolds, symbolising tradition, quality and identity. Bin 407 was born in the heart of South Australia, a region known for its extraordinary variety of terroirs. Grapes are sourced from different wine growing areas such as Padthaway, Coonawarra, Wrattonbully, McLaren Vale and Barossa Valley. And each area brings unique characteristics, enriching the wine's overall profile. 100% Cabernet Sauvignon, this grape variety is known for its ability to adapt to different terroirs, and in South Australia it is at its best, thanks to the ideal climatic conditions and the diversity of soils. At the end of vinification, the wine is aged for 12 months in French oak barrels, approximately 27% of which are new, and American oak barrels, 8% of which are new. This gives Bin 407 complexity and harmony, without overpowering the fruit character of the wine. Deep and lively red in colour, the nose is immediately recognisable as a Cabernet, with notes of violets, lavender and aromas of pastry, bread crust, thyme, oregano and olives, as well as a touch of leather. Then cedar and oak. In the mouth, it is medium-bodied, with lively acidity and perfectly integrated tannins. Fruit is dominant, with redcurrant, plum and fresh rhubarb. The oak is perfectly integrated, resulting in a balanced Cabernet with no edge. Ideal with grilled red meats, roasts and game.
