A small jewel that springs from the volcanic and tuffaceous hills of Breganze. We are talking about Acininobili, a passito di Vespaiola proposed here by Maculan. Son of a unique terroir, shaped by millions of years of volcanic activity, the soils here are rich in minerals and well drained. An ideal substratum for Vespaiola, a native white grape of Breganze, famous for its rusticity and good withering capacity. When fully ripe, in fact, this grape gives clusters rich in sugars and aromas. The grapes are carefully selected by hand, one by one, and left to dry on racks to concentrate sugars and aromas. The subsequent slow vinification takes place in new Allier barriques, where the wine then rests for about two years, developing complexity and elegance. Its colour, a shiny, antique gold, anticipates an intoxicating bouquet, with notes of acacia honey, dried fruit, sultanas and even hints of flint. In the mouth, however, it reveals itself to be a masterpiece of balance: sweet but not cloying, full and sumptuous, with a voluminous body and a very long persistence that leaves its mark. A meditation wine, it is perfect to round off an important meal or to accompany a relaxing moment in front of the fireplace.

Tradition has it that the name Vespaiola, used for the typical grape of the Breganze area, derives from its particularly sweet and sugary nature. It is an irresistible temptation for bees and wasps that delicately rest on its bunches to feed on its sweet juice. The Vespaiola grape is used to produce a precious passito wine, the Torcolato di Breganze DOC, proposed here by Maculan in a traditional version. 100% Vespaiola grapes, the bunches are hung in special rooms in the winery and left to dry slowly for about 4 months. Only then are they transformed, first with a fermentation in steel and then with a slow maturation phase in barriques, partly new, partly used, for no less than a year. Brilliant golden yellow in colour, the nose reveals an intense bouquet, with notes of honey, flowers, vanilla and noble woods. In the mouth it is sweet and gratifying. It has good body and an excellent balance between acidity and sugars. It is the wine to be reserved for special occasions, when it can be served with mature and intensely flavoured cheeses, or with simple traditional desserts.

The Breganze area, between the Astico and Brenta rivers, on the first slopes of the Asiago Plateau, thanks to its particularly suitable terroir, is a land of great wine production. Starting from autochthonous, i.e. typical vines, such as the Vespaiola, but also from international vines. The climate here is very favourable, thanks to hot but not sultry summers and relatively cold winters. This, combined with soils of ancient volcanic and tufaceous origin, allows capricious grape varieties such as Pinot Noir to express themselves at a high level. As in this DOC Breganze proposed by Maculan. In this case the noble red wine of French origin is proposed in a very "easy" version, produced only in steel and with strict temperature control. Pale ruby red, typical for the variety, this Pinot has fine and elegant aromas with slightly spicy notes. In the mouth it is superbly balanced and dry. It has a good structure, with delicate and subtle aromas of small red fruits. A wine that is good right away, it also has a fair amount of ageing potential. The producer, in fact, suggests that, if well stored, it can slowly evolve even for 8, 10 years. We have plenty of time, therefore, to find the right occasion to uncork it, perhaps alongside tasty dishes, such as a nice baked pasta or as an accompaniment to a simple board of salami and medium-aged cheeses.

Veneto IGT, Brentino is a red wine of great character proposed by Maculan. Merlot for about 55% and Cabernet Sauvignon for the rest, Brentino is a classic Bordeaux blend, produced with grapes from the best vineyards on the banks of the Brenta, in the DOC Breganze area. We are in a corner of the province of Vicenza, where the climate is mild and the soils are rich in minerals and tuff. The production process begins with a hand harvest of the best grapes selected directly in the vineyard. This is followed by a fermentation phase in steel tanks, after which the wine is sent through a slow maturation phase. Approximately half of the mass is left in steel tanks for a year, while the other half is placed in French oak barriques. At the end of maturation, the two parts are re-assembled and the wine bottled. It thus turns out in red characterised by an intense ruby colour with garnet hues. Ample and fruity bouquet, with slight hints of wood due to the time spent in barriques, in the mouth it is appreciated above all for its pleasantly dry flavour and good body. A balanced wine with character, it closes with a good persistence. On the table it goes well with savoury first courses. Excellent with game, roasts and classic grilled meats.

Another interesting sweet wine. Another creation from the Maculan winery. In this case, however, the starring grape is not Vespaiola, but the more common Moscato. Dindarello, Veneto IGT Moscato Passito is produced from grapes harvested on the Breganzese hills, in the province of Vicenza, on volcanic and tuffaceous soils. The grapes are dried for about a month in the drying room and then vinified in stainless steel to preserve all their primary and aromatic characteristics. Straw yellow in colour, the nose reveals an extraordinarily intense bouquet, with hints typical of the variety, of honey and flowers. Sweet and very fresh, balanced and pleasantly full, it has a long and pleasant persistence. Excellent with simple desserts such as fruit tarts and desserts with cream, the best feature of this Dindarello is its versatility, which makes it perfect for every convivial moment.

It is no coincidence that the secret of this wine's decisive character lies in the particular volcanic terroir of the Breganze hills. These, in fact, are the result of eruptions that occurred millions of years ago. The soils, composed of basalt and tufa, are rich in minerals and well drained, giving the Vespaiola grapes an intense minerality and marked freshness. An indigenous white grape variety, Vespaiola is distinguished by its rusticity and its ability to adapt well to volcanic soils. The bunches, consisting of small, compact grapes, ripen late, yielding grapes rich in sugars and aromas. The grapes are harvested manually and undergo a short cold maceration to extract the aromatic precursors. Soft pressing and ageing in steel vats preserve the wine's freshness and fragrance. Pale straw yellow, enhanced by greenish reflections, it conquers the nose with a clean and intense bouquet, characterised by floral notes and hints of white-fleshed fruit. In the mouth it is dry and full, with a lively freshness balanced by a good structure. The typical minerality of the volcanic soil emerges with elegance, giving it a long and pleasant aromatic persistence.

Bidibi di Maculan is a young and pleasantly fresh wine. It comes from a blend of Tai grapes, the name given to the Friulano vine in the Vicenza area, and Sauvignon Blanc. The two vines, different in many ways, have the ability to complement each other, creating a wine of great pleasantness and drinkability. The Tai, in fact, brings structure and body. The Sauvignon, on the other hand, brings freshness and aromaticity. Veneto IGT Bianco, this white wine is the result of super careful processing of the grapes, with cold maceration for two days and soft pressing in hyper-reduction, i.e. limiting as much as possible the contact of the must with oxygen in order to preserve all the finest aromas and scents. Clear straw yellow in colour, the nose is captivating with its notes of ripe and tropical fruit, as well as the typical Sauvignon scents. In the mouth, then, it reveals itself as a dry but full wine, with a positive balance between softness and acidity. Finally, the aromatic persistence is pleasant and long. Perfect as an aperitif, this white wine goes well with soups, first courses and delicately flavoured fish.
