The one offered here is a very pleasant pure Gewürztraminer that belongs to Cavit's Bottega Vinai line. Trentino DOC, this line includes wines produced from a selection of the most suitable wine-growing areas in the region. Deeply territorial wines that, as in this case, are born from the processing of typical grapes. Traminer, in particular, originates from the Trentino-Alto Adige region, and more precisely from the town of Termeno, from where it then spread, especially to some important German wine-growing areas. Traminer, in fact, benefits from cold climates, perfect for enhancing its aromas. It is, in fact, the aromatic variety par excellence. In this case, the grapes are harvested by hand, destemmed and crushed. The must remains in contact with the skins for a short time to extract all the aromas. 'The excellent Marzemino' is declaimed in Don Giovanni, Mozart's famous composition. At the time, it was a sweet and persuasive wine, appreciated by the troops of the Serenissima republic of Venice. Whereas today it is preferred in a dry version. But always gentle. Today, this red grape variety is a true standard-bearer for Trentino winegrowing, a fair compromise between fragrant young wines and more traditional austere ones. Traditional red vinification, with one-week maceration in steel tanks, after processing, to maintain the typical floral character of the variety, it is matured in steel for 6 months before bottling. Intense and brilliant ruby red in colour with violet hues that tend to fade with age, the nose reveals intense hints of violets and ripe cherries, with subtle spicy notes of liquorice. In the mouth, however, the moderate acidity and balanced tannins make this wine particularly harmonious and rounded. An indigenous variety of the Trentino-South Tyrol region, Schiava Gentile has been cultivated here since time immemorial and is mentioned as far back as 1300. A curiosity about the name. The term 'schiava' probably refers to the fact that since ancient times this grape was cultivated 'schiavizzata', i.e. tied to a pole. In this case, Cavit obtains the grapes to produce this delicate rosé from the Bottega Vinai line from Vallagarina, to the right and left of the Adige River, in the foothills surrounding the city of Rovereto. Here the climate is typical, with cold, snowy winters and hot, very hot, but breezy summers with beneficial temperature swings between day and night. Hand-picked and carefully selected grapes, after crushing are vinified in pink at a controlled temperature. This is followed by a short ageing period in stainless steel tanks to preserve freshness and fragrance before bottling. The result is a beautiful wine characterised by a vivid, bright pink colour. The nose is pleasantly fragrant and fruity while the palate reveals a well-dried rosé, with clear notes of raspberry and berries, followed by a delicately bitter finish reminiscent of almonds. An extremely versatile wine, it goes well with simple and tasty aperitifs but also with first courses and fish soups. Also excellent with classic rabbit alla cacciatora, fresh cheeses and cured meats. Difficult, if not impossible, to put it through its paces.

The origins of Lagrein are lost in time. It seems that it was already cultivated in the 16th century by the Benedictine Fathers in Gries di Bolzano. Today it is widely diffused in all Trentino, to the point that someone hypothesizes that its name derives from that of Vallagarina. CAVIT offers it in this elegant version, produced from grapes harvested in the best exposed areas of the Adige Valley and Vallagarina, with good temperature range between day and night. Traditional red wine vinification, maceration and fermentation take place in temperature-controlled stainless steel containers. Then, at the end of the alcoholic fermentation, the wine is put into oak barriques where the malolactic fermentation takes place and where it is aged for over a year. But that's not enough. Before bottling, in fact, the wine undergoes further aging in small oak barrels for another 4-6 months. The result is a beautiful glass of very intense ruby red colour, with hints of berries, and in particular raspberry, currant and blackberry, and clear hints of vanilla. In the mouth it is well structured, with a perfect balance between tannins and acidity. Easy to pair with satisfaction, it is a wine that goes well with hot appetizers, pasta dishes dressed with meat sauces or chicken cacciatora.

In the case of this Chardonnay, for example, the vineyards are located in two of the most fascinating areas of Trentino: the Serravalle hills in Vallagarina and the Valle dei Laghi, north of Lake Garda. Chardonnay, after all, is the most widely cultivated international variety in the world, due to its great ability to adapt to different environments, while still producing significant wines. In Trentino, in particular, Chardonnay seems to have found a particularly favourable environment, so much so that it now accounts for one third of wine production. The grapes, harvested when fully ripe, are soon brought to the cellar to be sent to vinification. Then, after pressing, the skins are left to macerate for some time to obtain wines of greater complexity. This is followed by fermentation and ageing in wood on its lees for about 8 months. This choice made by the winery's oenologists results in a wine of great aromatic complexity that presents not only the classic aromas of fresh fruit, apple, citrus and banana, but also a slight note of pastry. It is called Kelter, 'press' in German, and is a pure Lagrein. It is offered by Cavit, Trentino DOC Riserva, and is a fine example of territoriality. The grapes come from the Adige Valley, from vineyards on glacial or morainic terraces, with brown, moderately deep, well-drained soils. Vinification is the traditional red method, with fermentation taking place at a controlled temperature and long maceration on the skins in small stainless steel tanks. At the end of alcoholic fermentation, the wine is placed in barriques where malolactic fermentation takes place. At the end of this phase, the wine begins a long period of maturation in wood. After blending, it then rests in steel vats awaiting bottling. In the glass it has a beautiful intense ruby red colour with violet reflections. On the nose, aromas of raspberry and blueberry, vanilla and cocoa are perceived. In the mouth, however, the sip is complex and structured, with a long persistence. Perfect for roasts and stews, it goes well with game and red meat.

Quattro Vicariati, here proposed in a magnum version, i.e. in a 1.5-litre bottle, is a Rosso Trentino Superiore DOC made from international grapes. It is, as they say in the jargon, an elegant Bordeaux blend, composed of 65% Cabernet Sauvignon grapes and the remaining 30% Merlot, to which is added a small percentage, about 5% Cabernet Franc. A (great) oenological gem signed by Cavit, produced with grapes from the area between Ala, Avio, Brentonico and Mori, in Vallegarina. This area, known as the Quattro Vicariati (Four Vicariates), is the southernmost in the region and is therefore the most suitable for the production of great red wines. Vinified in red, with maceration on the skins for about two weeks, after fermentation the wine is left to mature in barriques and small oak barrels for at least 24 months. Then, after bottling, follows further ageing in the bottle for about another 12 months. A red wine with an intense, bright ruby colour, the nose offers balsamic, plum, blackberry and tobacco sensations. In the mouth, however, it shows great balance, with typical notes of green pepper and ripe red berries. Savoury and soft, it has noble tannins and a long, enveloping finish. A red of fine character, this Quattro Vicariati is ideal with first courses dressed with tasty sauces, but also grilled meat and mature cheeses.

Müller Thurgau is one of the most popular grape varieties for producers working in cold climates with long, harsh winters. This is because the Müller, when the environment is hostile, is at its best. After all, it was created in 1882 by prof. Hermann Müller, in order to adapt to the cold climate of the canton of Thurgau in Switzerland. The grapes are selected and harvested by hand. Quickly brought to the cellar, they are softly pressed and undergo a short cold maceration in contact with the skins. On the other hand, the soils, consisting of gravel and porphyritic sand, ensure good drainage and give the finished wine minerality and flavour. The grapes are carefully selected in the countryside. After arriving at the winery, they are pressed and undergo maceration on the skins for about 7 days at a controlled temperature. This process allows all the colour and aromatic profile of the wine to be extracted, preserving its freshness. After alcoholic fermentation, there follows a period of ageing in stainless steel and cement, always in contact with its fine lees. In the glass, the colour is a lively, brilliant red, while the nose reveals intense, fragrant aromas reminiscent of cherry, raspberry and red fruit in general. Then floral notes and hints of almond that contribute to an inviting bouquet. In the mouth, on the other hand, it conquers with its crisp freshness and extreme drinkability, thanks also to the lovely persistent and mineral finish. Maso Toresella is the representative office of Cavit, a fine company in the Trentino region. An enchanting place, on the shores of Lake Toblino, surrounded by vineyards. In short, a little corner of paradise for lovers of nature and good wine. It is here that this La Cuvée, Vigneti delle Dolomiti IGT is produced from the processing of four international grape varieties, Sauvignon, Chardonnay, Gewürztraminer and Riesling. The Valle dei Laghi, as this area is known, is literally wedged between mountains, at the foot of the Dolomites and not far from Lake Garda. The vineyards are located close to the lake, about 245 metres above sea level. The climate, cool but not too cool, is characterised by a constantly blowing breeze, the famous Ora del Garda, which makes the environment suitable for obtaining wines with important characters of finesse and elegance. The different varieties, harvested by hand in the second and third decade of September, are taken to the cellar to be initially destemmed and crushed. This is followed by cold maceration of the skins for 6 hours to facilitate aromatic extraction. The must is then sent to fermentation in stainless steel tanks, and the wine is aged sur lie until bottling. Straw yellow in colour with greenish highlights, the nose reveals a complex and elegant bouquet, with fruity aromas reminiscent of fresh citrus fruits, such as citron, and white-fleshed fruit, Golden apple, Williams pear and peach. Tropical fruit notes of pineapple and the less intense spicy notes of sage and spearmint complete the bouquet. In the mouth, it is a well-structured wine with excellent minerality and a harmonious, fresh finish. Excellent with fish hors d'oeuvres, including raw fish, vegetable first courses and white meat main courses.

Schiava, on the other hand, comes from vineyards located in Riva del Garda, between 300 and 500 metres above sea level. Processing begins with careful selection in the vineyard. Once in the cellar, the grapes undergo a very brief contact on the skins in the press before being crushed. This is followed by fermentation, at a controlled temperature, and an ageing phase in steel tanks, perfect for preserving fragrance and freshness.
