A late harvest of pure Muscat grapes. The grapes are not harvested when they reach maturity but are left on the vines, exposed to the sun and air, waiting for a slow drying process to begin. The result is that the sugar contained in the bunch is concentrated and the wine obtained is particularly fragrant. This technique, however, has some risks. All it takes is a thunderstorm or an early autumn frost to thwart all the vintner's efforts. But if things go right, the result is a wonderfully sweet wine with an incredible breadth of aromas. The nose is intense and fruity, with hints of raisins, vanilla, honey and apricot.

A beautiful expression of the most beloved white grape variety, originally from France but well adapted to different climates. With Spasso, Vite Colte has launched itself (successfully) into a new wine project. It is a pure Barbera, left to dry on the vine in the vineyard until it reaches the right concentration of sugar. This is a difficult technique that presents many unknowns, given that the bunches, despite the withering, must remain perfectly healthy in order not to ruin the final result. The vinification then takes place in steel, with long macerations that continue for over two weeks at a temperature of about 25 degrees. Malolactic fermentation follows and the wine is aged for at least six months in barriques. The end result is a wine characterized by an intense ruby red colour, with a wide and elegant bouquet of aromas, with hints of ripe red fruit, plum jam and currants. In the mouth it is intense, with clear notes of dried fruit, soft, warm and enveloping.

The one proposed by Vite Colte is a particularly interesting Barolo. As per the regulations, the grapes used are strictly those of Nebbiolo. But, thanks to the vast availability of hectares under vine, the winemakers of the Cantina can choose grapes from different areas of the appellation, blending richer and more intense grapes with others capable of creating finer and more elegant wines. Timorasso is an indigenous grape variety of the Piedmont area, in particular of the Colli Tortonesi, in the south-eastern part of Piedmont. In the past, this vine had almost completely disappeared, supplanted by other varieties considered more productive and easier to cultivate. However, as often happens in the world of wine, starting in the 1980s and even more so in the following decade, some visionary producers rediscovered the potential of Timorasso, giving rise to a true renaissance of this grape variety. In recent years, then, this vine has gained increasing attention from wine critics, becoming one of the most appreciated and internationally recognised Piedmontese white wines. A fine example is this Colli Tortonesi DOC Timorasso Derthona, proposed here by Vite Colte. 'Derthona' is the ancient Roman name for the city of Tortona, located precisely in the Colli Tortonesi. After a soft pressing and a short cold maceration, the must is left to ferment at a controlled temperature to enhance the varietal aromas. This is followed by a long period of ageing on yeasts and fine lees to increase complexity and longevity. This maturation phase continues for at least 12 months. Intense straw yellow, the nose is complex. Notes of flowers, such as acacia and hawthorn, peach and honey are accompanied by hints of minerals and flint. In the mouth, it is pleasantly dry, full-bodied, savoury, with a robust and persistent structure. Precisely because of its structure, Timorasso can be paired with a wide range of dishes. It goes particularly well with fish dishes, appetisers, risottos and white meat dishes. Its acidity, on the other hand, also makes it an excellent companion for medium-aged cheeses.

In front of a bottle of Alta Langa DOCG, lovers of bubbles always pay close attention. They know, in fact, that this is certainly no ordinary production. Alta Langa means small numbers but great quality. This Brut proposed by Vite Colte is no exception. It is 80% Pinot Noir, and the remainder is Chardonnay. Harvesting is manual and the grapes are delivered to the cellar in crates to preserve their integrity. This is followed by soft pressing and careful vinification. The blending of Pinot and Chardonnay takes place only in the spring following the harvest, when the most delicate phase, that of frothing in the bottle, also begins. Refinement on the lees lasts for a minimum of 30 months. This is followed by disgorgement, or dégorgement as the French say, and a modest dosage. The result is a perlage of great elegance. A perfect glass as an aperitif but which can also accompany a fish-based dinner. Straw yellow colour with fine and persistent perlage. The nose has aromas of bread crust, yeast and dried fruit. In the mouth it is rich, endowed with a nice acidity and leaves the palate with a prolonged sensation of creaminess.

Nebbiolo is a versatile grape. It is able to express itself on so many levels. From the peaks of excellence of Barolo and Barbaresco, unforgettable wines but which require a little experience (and often a large wallet) to be fully appreciated, to the simpler and more immediate Nebbiolo DOC wines produced on the hills of Asti and Alba. And it is precisely to the latter category that this pleasant red wine proposed by Vite Colte also belongs. An immediate Nebbiolo, the result of traditional vinification and ageing in oak barrels for about a year. The result is a wine of great pleasantness, characterized by a beautiful intense ruby red colour. The nose is fine and delicate, with notes of vanilla, licorice and graphite. In the mouth it is balanced, pleasantly tannic with a long and persistent finish.

Although Piedmont is known worldwide for the quality of its great red wines, there is no shortage of opportunities to try a good white wine. In particular in the Roero area where, thanks to the Arneis grape variety, very pleasant wines are obtained, perfect with lunches and aperitifs in company. Arneis is an autochthonous variety, i.e. typical of the area, which lends itself to various processes, both in still and sparkling versions. In the case of this DOCG Villata, proposed by Vite Colte, here is a wine characterized by a beautiful light straw yellow colour. The nose is dominated by sweet scents reminiscent of vanilla, cotton candy and fresh flowers. In the mouth, however, it proves to be a fresh wine, thanks to the pleasant basic acidity, and elegant. Fragrant and fruity, the finish is reminiscent of Bavarian cream and honey.
